To pair with my Malaysian Curry Laska, I decided to make a light salad. The RawSpiceBar box also had a Kaffir Lime spice blend, which I though would be perfect for a cucumber salad. I ended up making a dressing out of the spice blend and tossing it with shaved mango and cucumber.
I am not sure what it is, but I have been seriously craving fish recently. Which is definitely not a bad thing! I didn’t want to get stuck making the same old fish dishes that I always do, so I was on a Pinterest search for some unique new recipe ideas. I found a recipe from Jamie Oliver that sounds too delicious not to try.
There are a thousand methods for caramelizing onions and each chef will tell you that their way is the best. High heat, stirring a lot? Low and slow? Water? No water? Salt? No salt? No matter the method, caramelized onions make a fantastic addition to so many dishes!

Local, non-GMO Colorado corn is here! I always get so excited this time of year. I love corn, but usually am too afraid to buy it in the off season since 88% of all corn that is grown is genetically modified- yikes! Luckily there are still a few local Colorado farmers growing corn the right way- including Olathe sweet corn. Sweet corn is a little whiter than normal corn and, like the name suggests, is much sweeter. Plus, you can’t beat the 2 ears for a buck price tag!

Summer has officially ended. There are no more leftover zucchinis lurking in my fridge, the cute little baby heirloom tomatoes are gone, and my herb plants have had enough. I just bought a new pair of snow boots, I added an extra blanket to our bed, and Arapahoe Basin has officially opened the white strip of death (this is when the ski hill opens with only one run).
It is officially soup season. The tops of the mountains have had a dusting of snow for some time now, my windshield is frosted over each morning and I’ve busted out the crock pot. I love making soup; there is so much room for creativity and experimentation. It is also a great way to use up leftover groceries that may be going bad.
There is something magical about potatoes. For some, they are an unhealthy, white starch- but for a broke twenty-something cook, they are a versatile, affordable delight. I love that you can use potatoes for so many different meals and in so many ways!
