I got rained on for the first time the other day riding my bike to the beach. Definitely the first of many I think. I guess there are prices to pay when you live in Paradise! I only have a bike, so I ride it everywhere, including to and from work. Luckily I work in a kitchen with a bunch of sweaty guys anyway so it is OK that I show up drenched in sweat… Riding my bike has been a great workout for me though! I forces me to workout, which is perfect for my type of personality… 🙂 I know if that is not your case, it can be hard to find time or motivation to workout, I had the same problem. If that is how you feel, this is a recipe for you!
Just a quick Hawaii update before I introduce our awesome guest blogger for today. I have finally moved in and (I think) got everything I need- i.e. bedding, my sweet air mattress, a bike, a surfboard, staples- after spending almost all the money I had to get me on my feet. Keep your fingers crossed for my stage at Morimoto Waikiki tomorrow night! It is so great here, everyone seems super nice and the weather WAY beats Colorado’s freezing winter! Although I will admit I’ve got quite the sunburn at the moment, that’s OK though. How’s the new year treating everybody so far? I am down to only 3 days left in colorful Colorado before heading to the beaches of Hawaii for eight months- no I am not excited at all…. Right. I am like a little kid before Christmas, I am dying waiting for Friday to arrive! I have been trying to exercise more and eat healthier before I go, but we all know how hard that is. For some reason, when you are trying to NOT eat certain things, they are ALL you crave.
Can you believe that it is almost Christmas?! What are your plans for the holidays? I will be spending Christmas in Denver with parents, brothers and a few other relatives. I am really excited about this Christmas because I hardly get to see my brothers any more, plus I will be moving far, far away in exactly two weeks from today. I don’t know about you, but here in Colorado it has been snowy, snowy, snowy. This past Tuesday was in the negatives in Boulder! With winter in full effect, I find myself constantly wanting soup. It has finally hit me that I will be leaving Colorado in just about one month. I was born and raised in Colorado. I grew up with the mountains and snow sports. I had my heart set of going to college out of state, but when the time came I found myself sticking around for the mountains. I have lived in the mountains each winter while in college and have molded my life around snowboarding. With graduation only about a week away, I am still in shock. First, I can’t believe I am already graduating (a semester early!). Second, I can’t believe that I am moving to the BEACH!
Once again, it is time for the Secret Recipe Club reveal day! This month I had Ellie from The Bitchin’ Kitchen. She had a bunch of delicious recipes. She is a food blogger from Hoboken, NJ. I am still planning on making her Jalapeno Popper Cupcakes!
Last weekend, I finally went snowboarding for the first time in SEVEN MONTHS! It got me thinking, has it really been seven months since I left for Africa? On top of that it has already been over a month since I left for Italy! It is kind of scary how fast my last semester of college is going. It is a bit bittersweet though, I can’t believe I am graduating, but so excited to move to Hawaii for eight months! I am still looking for a job, but hopefully will find one before I go! I know I promised to share a few recipes from my Italy trip, so here is the first one. Easy, but one of my favorites.
BRR!! I never thought I would see the day that I would want to get away from the cold. This snow in Boulder has dropped the temperature in my house to below 60 and I am freezing! If you are feeling the cold of the winter coming, this is the perfect recipe for you. I saw a recipe for zucchini cheese soup a while back on Cinnamon Girl Recipes and was so excited to find another clever way to use up my zucchini.
Finally, to the cooking part of my cooking trip! We headed to a small town called Spongano the morning after our welcome dinner in Lecce. This is where the castle was located. Some people may call this a manor house, but call it what you want. There were like 20 bedrooms and bathrooms and an awesome pool and a garden filled with all sorts of fruit trees… I’d call that a castle. (Also, thanks to my mom, the host of the trip, for most of these photos! I was too preoccupied to take pictures most of the week.
