  • 1 cup white rice
  • 1 can chicken stock
  • 1 can diced tomatoes (or fresh)
  • 1 can sweet corn (or fresh)
  • 3 cloves garlic (minced)
  • 1 tbsp hot sauce
  • ½ lb shredded chicken
  1. Cook the rice according to package directions, but substitute the water with chicken stock.
  2. In a medium saucepan, saute ½ onion until soft (about 5 minutes).
  3. Once the rice is cooked, mix everything together until heated evenly through.
  4. Serve with refried beans, guacamole or any other Mexican favorite.
