Chicken & Broccoli Grilled Cheese

  • 1 boneless, skinless chicken breast
  • salt & pepper
  • 1 C broccoli, sliced
  • ¼ C white onion, sliced
  • 12 oz cheddar cheese (or desired amount)
  • 4 slices sourdough bread (or bread of choice)
  • butter
  1. Preheat oven to 375F. Season the chicken breast with salt and pepper. Bake until cooked through (about 30 min).
  2. Blanch broccoli in salted water and set aside.
  3. To build the sandwich, layer onion and broccoli on one side of bread and chicken on the other. top each side with cheese. Repeat for second sandwich.
  4. Melt butter in a large skillet over medium heat. Place each sandwich half in pan and cover until cheese is melted.
  5. Combine the halves and enjoy!
