Fall is in full force in the mountains. My sister-in-law sent a video of her lawn today and it was still BRIGHT GREEN! Definitely not the case here. The trees have almost lost all their leaves and we have even gotten a few days with snow. Luckily, apples are in season and I had a HUGE acorn squash from Ben’s Mom sitting in our pantry. Bring on the comforting flavors of fall!
Remember my Moroccan Stuffed Acorn Squash? This is similar to that recipe (which is still one of my favorites to this day), but with a little fall flair. I like this recipe because it is still healthy, when a lot of comfort meals can be the opposite of that. Also, apples are in season so take advantage! I chose to use Gala because of their sugar level and great flavor. Sage and Thyme are perfect fall herbs, I definitely recommend using fresh!
