Everybody watch out, I have had a creative moment so beware. I’m sure we all suffer from the same feeling; you know the one where you feel like you never have your own good recipe ideas and everybody else has the coolest ideas, so you just want to copy them? I am always trying to think up my own recipes, but very rarely do I actually think up a blog-worthy idea. So as you can guess I am VERY excited to share this recipe with you; it is my very own recipe brainchild. The one thing you will notice about my own recipes is that they always have some outrageous title, way longer than any should probably ever be. But just think of it as a way to attempt to show how deliciously packed the recipe is!
This week has been a nice break from the Holidays, but tomorrow it all starts again. I was able to head up to the mountains and spend my last two days snowboarding until next season. I wish Colorado had some better snow for me before I leave, but that’s alright, I’ll take it. I showed up to my friend’s house with all sorts of leftovers for the boys; they were stoked. Gingersnap Cookies & Cream Cheesecake
To add to the holiday festivities, I decided to make something with gingerbread. I sat around for a while trying to think what else I could do with gingerbread other than make cookies or a house. Eventually, I decided on gingerbread cheesecake. I had never made homemade cheesecake before, but am very proud of the outcome. I used fat-free cream cheese too, which makes this dessert pretty healthy as far as desserts go!
