…Because everybody needs a rich, fatty, comforting meal every now and then. This dish is truly decadent. The tarragon cuts through the creamy sauce with its intense anise-like herbal flavor. The fettuccini noodles are the perfect noodle for a dish like this, because they have a ton of surface area to soak up the sauce. Leave out the chicken to make this a (very rich) vegetarian option.
It has been a snowy week up here in the mountains; we got over 2 feet of snow total! Not to mention, the temps were as cold as -15F some nights (with a windchill of -30F!). This kind of weather calls for some serious comfort food. Thanks to Jamie Oliver for, yet another, delicious inspiration!
With finals for culinary school right around the corner, my classmates and I have been scrambling to lock down our externships. When meeting with my advisor, I was told that I had the potential to pursue something big, even bigger than anything in Colorado. It really got me thinking and motivated me to settle for nothing but the best. I booked my flight to NYC and set up stages at a couple Michelin Starred restaurants, Eleven Madison Park and The Modern. Both stages went great; I was stoked! EMP seemed a little too military-like for me. Only Sous Chefs were allowed to plate the food and you weren’t allowed to talk in the kitchen. The Modern, on the other hand, let their cooks do much more and everyone seemed to be having a great time during service. I was offered a paid externship with The Modern and will be starting in April! I am excited to experience something new and take the next step in my career.

Potatoes have been one of my favorites since I can remember. They were also my first “vegetable”. I also love how versatile potatoes are. You can really put whatever you want into your potatoes and they will, most likely, still be good.
I know that it may not be cold where most of you are, unless you are in Colorado I hear it is still snowing!, but I would suggest turning up your AC and still making this soup because it is just too delicious not to. If you have never had a loaded baked potato soup before, you need to. It is all of the goodness of a baked potato made into a creamy and delicious soup.
For some reason, I have been craving comfort food lately. It is probably not a good thing, considering I am going to Africa to the beach for three weeks, one month exactly from today! Oh well, what can you do. Cheese is one of my biggest weaknesses. I could probably eat an entire block of cheese as a snack, but I am getting off the topic.
