I can’t believe that I almost forgot to share this recipe before the Holidays. For all you last-minute folks, you are in luck! Even though I have only been to Red Lobster once, the memory of the Cheddar Bay Biscuits will never leave my mind. They were the best biscuit I had ever had. After talking about them with Ben, I decided there had to be a copycat recipe out there- and go figure- there was!
I finally finished eating all of the vegetables from my harvest (which included about 15 heads of kale!). I am definitely going to miss the days of walking around back to cut my lettuce for lunch. My last hope for harvest are my tomatillo plants that I brought inside. They have a TON of little tomatillos on them, but I am not sure if they are going to grow inside… Fingers crossed!
It snowed here this weekend… on the EXACT same day as the first snow last year (thanks Facebook!)… Crazy right? Being cooped up in the house this weekend led me to cleaning out the large amount of rotten bananas in my freezer. Sometimes I think Ben purposely lets them rot, just so I will make banana bread…
I saw a crepe cake on social media a while back and knew I HAD to make one. I went with a berry compote and powdered sugar glaze, so that it could be served as breakfast or dessert, because who doesn’t want this for breakfast? This recipe is meant to be shared and is great for a brunch!
Sometimes I find myself talking about food with Ben, only to hear the response, “I have never had that.” It makes my heart ache; how could somebody not have had ____! This time, it was a muffin. NEVER. HAD. A. MUFFIN?! I have a soft spot for a good blueberry muffin, so I had to make a Ben Friendly (soon to be trademarked) blueberry muffin.
Do you bake? I don’t. Well not usually. I have never really had a sweet tooth and have always preferred more savory dishes. If I do crave something sweet it is usually a beverage. Ben, on the other hand, has a problem. He has a crazy sweet tooth. He told me the other day that it is probably a good thing he is allergic to most sweets, because he would be buying cupcakes and other treats daily.
For Valentine’s Day, I wanted to surprise my boyfriend with a special treat. The only problem is that he is allergic to almost everything- eggs, red meat, tree nuts & shellfish! I remembered him telling me if he could try anything he was allergic to it would be gooey fudge brownies. Not being much of a baker, I decided to suck it up and give my man what he wanted. The problem is, I am not much of a baker. And I live in Colorado. I found a great eggless gooey brownie recipe on the Family Ever After blog, but didn’t even think about the fact that I was baking at high altitude. The brownies rose too fast and collapsed, leaving me with crystalized sugar hockey pucks. Being the kind soul he is, my boyfriend still ate three of the hockey pucks and told me they were still delicious, but I knew the truth.
