The title of this Throwback Thursday recipe may have some of your running for the door because it is a soup. Also, I know it may be hot where some of you are, but that doesn’t mean you have to cut out hot food! I know you will have a chilly night when you are craving a delicious soup and this recipe is going to hit the spot. It is a spicy, cheesy chicken corn chowder that is just the kind of heat you want in the summer time.
This soup is packed with green chiles, red peppers, onion, cheese, chicken and potatoes. If you are not one for spicy food you can simply just leave out the green chiles and cayenne pepper. This soup goes perfectly with the Ciabatta Bread from last Thursday’s throwback recipe. Dig in!
I am moving to a new house at the end of the month and it has so many great new things to offer. I have a huge garden. We just planted around 30 different plants, including peppers, tomatoes, squash, cucumbers, eggplant, lettuces, peas and strawberries. We also have about 7 pots of herbs. If things go as planned I will be cooking with my own home-grown veggies all summer long! My new house also has something that many young foodies’ kitchens don’t- counter space! I cannot explain how great it is to finally have room to cook! One thing on my list of things to make in my new kitchen is bread, lots of bread.
This week’s throwback recipe is the only time I have made my own bread, other than the two years I spent working at Subway, which I wouldn’t really call making bread anyway. 😉 This was some of the most delicious bread I have ever had. The recipe gives it a delicious salty kick that makes you want to eat a huge piece all by itself. Plan your day if you are going to make this bread, because it takes a long time to let the dough rise properly. If you have never made your own bread, I encourage you to try this recipe; you won’t be disappointed!
There is something peculiar about combining sweet and salty flavors. I used to find my self being skeptical about pairing strange flavors, but recently they have really begun to intrigue me. Pork and apples is an old favorite combination of sweet and salty that never has seemed to bother me, probably because it is so common. Today, I find myself trying to find more unique combinations, but this is one recipe that will definitely still stay in the back of my head.
This recipe is great to serve when you have guests. The shallots give the sauteed apples a unique salty kick which pairs perfectly with a tasty slice of spiced pork tenderloin. A nice scoop of garlic mashed potatoes serves as a great side for this dish.
This week’s throwback recipe is a delicious sweet treat from France- eclairs. Last fall I was asked if I could make a friend eclairs and, at the time, I had no idea what they even were! I did my research and attempted to make my own. I ended up just cutting the tops off mine to fill them, but looking back I should have used a pastry bag. I would recommend a pastry bag for anyone who tries this recipe. I am looking forward to the baking classes when I begin culinary school because I think my baking skills could use some work!
There are a few classic things that I feel like every cook needs to try at some point, even if you just cook at home for fun. Wontons are one of those things. I personally think they are kind of a hassle, but they are a good thing to know how to make and will expand your culinary skills. This week’s throwback recipe is from the first time I ever made wontons, for a wonton soup.
This soup is light and healthy. It is great if you are feeling a bit under the weather or if you simply want a refreshing lunch on a cold day. The fried wontons give the soup a nice crunch if fried properly. I usually struggle with frying things since I don’t have a thermometer and don’t fry things that often. It’s important to fry the wontons at the right temperature or else they will burn (too hot) or get soggy (too cool). Enjoy!
This week’s throwback recipe is very memorable for me. I cook frequently for friends, especially my roommate. She is not a big seafood fan, but I have made her eat a few things this winter. This was one of the few salmon recipes that she liked, so I felt pretty accomplished! I think it also helped that I paired it with her favorite thing that I make- oven roasted potatoes. They are so easy, but so delicious!
So this week you get two throwback recipes. The first, a spicy salmon filet with a sweet orange glaze. The brown sugar and orange marmalade offset the spicy for a sensational taste. The second, seasoned oven roasted potatoes. These are easy to make and serve as a great side dish for tons of different meals. Definitely one to keep in mind.
We all have those nights where we don’t want to make a complex recipe for dinner. We just want three things- a meat, a starch and a veggie. The problem I have with that meal is that it ends up being so bland! This Thursday’s throwback recipe is an easy way to dress up your chicken for those kind of nights and give your dinner an original taste.

Sometimes nothing can beat a home-cooked Italian meal. I don’t make pasta much after working at Noodles & Co. for a year, but oh man these were good. I would hardly put these into the pasta category; they are so rich and delicious!
For this week’s throwback recipe, I give you my turkey, spinach and cheese stuffed shells. Stuffing these bad boys was a bit of work, but it was totally worth it. Once they are done and you bite into their gooey, cheesy goodness you will understand.
It’s Thursday again, wow these weeks have been flying by. My recipe for this Throwback Thursday really brings me back. This was one of the first “unique” recipes I learned and one of the ones that really got me excited about cooking. I am excited to share it with you, since it kind of hit a soft spot in me (I know cheesy, but it is what it is).
This recipe is so simple, but so good. I make it a lot without the coconut milk, but it is extremely good with coconut milk as well if you have the extra money to buy it! I recommend using a lot of lime, it just makes it even better. I hope that this recipe can get you excited to cook like it did for me! Also, thanks to my mom for these photos. =)
This week’s Throwback Thursday recipe is probably my favorite pie recipe that I have made to this day. The plums have the perfect amount of tartness that makes this pie so amazing. Also, if you ever have the opportunity to pick your own plums, take advantage of it, you’d be surprised how many plums you can get from even just one tree! =)
