Chicken & Broccoli Grilled Cheese

I love Mac ā€˜Nā€™ Cheese and I love grilled cheese sandwiches. Why not make your favorite Macs into grilled cheese?!

Ingredients
  

  • 1 boneless skinless chicken breast
  • salt & pepper
  • 1 C broccoli sliced
  • 1/4 C white onion sliced
  • 8 oz cheddar cheese or desired amount
  • 4 slices sourdough bread or bread of choice
  • butter

Instructions
 

  • Preheat oven to 375F. Season the chicken breast with salt and pepper. Bake until cooked through (about 30 min).
  • Blanch broccoli in salted water and set aside.
  • To build the sandwich, layer onion and broccoli on one side of bread and chicken on the other. top each side with cheese. Repeat for second sandwich.
  • Melt butter in a large skillet over medium heat. Place each sandwich half in pan and cover until cheese is melted.
  • Combine the halves and enjoy!
