Preheat the oven to 425F. White the oven is preheating, prepare the avocados.
Halve the avocado lengthwise and scoop out a small amount so that the egg and smoked salmon will fit inside.
Line each bowl with 1 oz smoked salmon.
Crack the eggs into each, then top with minced shallot, salt and pepper.
Bake the avocados at 425F for about 15 minutes, or until whites have set.
Top with a squeeze of lemon and crushed red pepper, if desired, before serving.
