Smoked Salmon Baked Eggs in Avocado

Ingredients

  • 1 large avocado
  • 2 eggs
  • 2 oz smoked salmon
  • 1 tsp minced shallot
  • salt
  • pepper
  • lemon
  • crushed red pepper

Instructions

  • Preheat the oven to 425F. White the oven is preheating, prepare the avocados.
  • Halve the avocado lengthwise and scoop out a small amount so that the egg and smoked salmon will fit inside.
  • Line each bowl with 1 oz smoked salmon.
  • Crack the eggs into each, then top with minced shallot, salt and pepper.
  • Bake the avocados at 425F for about 15 minutes, or until whites have set.
  • Top with a squeeze of lemon and crushed red pepper, if desired, before serving.
