Hawaiian SPAM Recipes: Pineapple & SPAM Casserole
I am sure many of you are about to run away already, just from reading the title of this post. The rest are probably thinking, “We ask for Hawaiian recipes and THIS is what you give us?!” When I made this, I got a kick out of my mom’s comment, “I raised you better than that.” Haha! All I can say is hear me out. My roommate recently was given an assignment to try an ethnic recipe that was out of her comfort zone. Since we are both from Colorado, we were both a little freaked out by SPAM. Honestly, I didn’t even really know what it was until we looked for recipes. Many of you may not consider SPAM an ethnic food, but in Hawaii it kind of is! Every year over 20,000 people make their way to Waikiki for the yearly SPAM Jam festival- that is some love for SPAM.

After taking a break for January to get the New Year in order, Secret Recipe Club is back in action! If you do not already know, Secret Recipe Club is a fun group of bloggers who are assigned a fellow blogger each month (secretly) and chose one recipe from their blogger’s site to recreate for reveal day. I have met many awesome bloggers through this club and love browsing and trying their recipes!
Wild Rice & Vegetable Stew
I know it may seem weird, but I have still eaten quite a bit of soup here in Hawaii. I love making soups and stews because I feel like it gives me room to be creative. I can throw whatever I want into a soup/stew and whip it up pretty quickly. Because of that, soups are a great way to use up leftover ingredients in your kitchen. Also, they are great if you don’t have time to stand over your stove while making dinner. You can be getting ready, taking care of the kids or just kicking back watching Top Chef while your soup works its magic.
Pear, Goat Cheese & Pistachio Pizza
Do any of you have that one (or two or three) food that you crave CONSTANTLY?! I have two, pizza and cheese. I could eat pizza anytime, anywhere. Lately all I have been thinking about it pizza, but for some odd reason I went a really long time without having any. As you could imagine, I was stoked when I walked into Morimoto a few days ago for work to find out that staff meal that day was focaccia pizza! Even after eating more than my fair share of staff meal, I still am craving pizza, so naturally I want to share one of my newest pizza creations with you to feed my craving.
Featured Foodie Friday: My Naturally Frugal Family
I don’t know about you, but here in Colorado it has been snowy, snowy, snowy. This past Tuesday was in the negatives in Boulder! With winter in full effect, I find myself constantly wanting soup. Crispy Baked Salmon w/ Avocado Remoulade
It is official. I am done with college assignments for EVER! I am so excited to be done. Without school to think about, I was able to cook up a storm last weekend while dog sitting for my parents’ 8-month-old golden retriever, Ellie. The great thing about cooking in my mom’s kitchen is that her pantry is always stocked and she has the greatest food photo lighting tools and accessories. This recipe was a little experiment that I did with my avocados while there.
Herbed Lemon-Pomegranate Mahi Mahi
This week I had a fresh pomegranate for the first time. I know that probably sounds crazy but I had only eaten pomegranate flavored things before, never an actual pomegranate. At first, I struggled with peeling it correctly and getting all the good stuff out. Once I had all the seeds out, I could not stop snacking even though I knew I needed them for this recipe! I found this recipe from Clean Eating magazine on the Kahakai Kitchen blog.
Zucchini Pepper-Jack Cheese Soup
BRR!! I never thought I would see the day that I would want to get away from the cold. This snow in Boulder has dropped the temperature in my house to below 60 and I am freezing! If you are feeling the cold of the winter coming, this is the perfect recipe for you. I saw a recipe for zucchini cheese soup a while back on Cinnamon Girl Recipes and was so excited to find another clever way to use up my zucchini.
Italy Pt. 3- Cooking at the Castle
Finally, to the cooking part of my cooking trip! We headed to a small town called Spongano the morning after our welcome dinner in Lecce. This is where the castle was located. Some people may call this a manor house, but call it what you want. There were like 20 bedrooms and bathrooms and an awesome pool and a garden filled with all sorts of fruit trees… I’d call that a castle. (Also, thanks to my mom, the host of the trip, for most of these photos! I was too preoccupied to take pictures most of the week. Roasted Peach & Tomato Gazpacho
For those of you who don’t know, I am currently in a small town in Southern Italy called Spongano. I am taking classes at a cooking school in a CASTLE! The weather has been great and the food has been delicious. I will be posting a couple of things about my trip soon, but for now I want to share this delicious gazpacho recipe that I made before I left.
