Perfect Sourdough Bread
I have discovered a new love for baking during this quarantine. Maybe it is the lower altitude in New Castle, or maybe I’ve developed more patience over the years, but one thing is for sure – I’ve definitely stepped up my baking game. For me, it is an almost meditative experience.
I also need to say that no other recipe has ever brought me as much joy as my first loaf of sourdough bread did – and I have made a LOT of recipes. So before you write this off for being too hard or too time-consuming, hear me out.

Tropical Smoothie Bowl
The birds are chirping, flowers are blooming, and temperatures are rising here on the Western Slope of Colorado! With average daily highs in the 80s, now is the perfect time to make these refreshing tropical smoothie bowls! I love smoothie bowls because you can mix and match whatever smoothie bowl toppings and fruit that you may have on hand. These particular smoothie bowls were made with mixed berries, banana and coconut milk, then topped with granola, chia seeds, grapes and bananas.

Pulled Pork Mee Goreng

Mee Goreng holds a special place in my heart. It (and Nasi Goreng) reminds me of my time volunteering at the Turtle Conservation Center on Nusa Penida off the coast of Bali. Though most of our meals were Nasi Goreng, it was always a treat to have the Mee Goreng, with noodles instead of rice!
Easy Shakshuka with Feta
Originating from the Ottoman Empire Shakshouka or Shakshuka is an easy baked egg recipe filled with flavor. The word is Arabic for “a mixture”, which is quite fitting for this dish. Although this version of the Shakshuka recipe is more traditional, there are TONS of ways to make this dish. Find a few other Shakshouka recipe ideas here!

Instant Pot Sticky Korean Chicken

Hello old friends! Wow, what a year it’s been. Sorry for being MIA for so long! Ben and I moved to the Western Slope of Colorado and began new careers. We also have been spending LOTS of time rock climbing. BUT – No excuses. All that matters is that we are here now and I have a bunch of tasty recipes to share with you all over the next few months, so be sure to follow along!
Malaysian Curry Laksa with Chicken & Shrimp
Brr! I have officially declared it Snowvember. It took a while to get here, but the snow just keeps coming. All the ski resorts are rushing to open new terrain for their opening weekends. I am definitely going to have to get out there soon. But for now, I am cuddling up in my apartment with a nice bowl of this Malaysian curry.
Authentic Pork Potstickers
There is not much better than freshly cooked potstickers. The yin and yang of crunchy and soft- packed full of flavor… yes, please. It may sound counter intuitive to sear the potstickers then add water, but it works! This pork potsticker recipe is a favorite in our household. They take a little time to make, but are so worth it.
Garlic Marinated Ribeye w/ Creamy Parmesan Polenta & Blistered Tomatoes
Man, that title is a mouthful. Rightfully so. This dish is big, rich, in your face… and SO delicious. Ben always makes fun of me for my “dinner-lunches” (a lunch that should be eaten for dinner). If you can have breakfast for dinner, you can have dinner for lunch!
Dark Chocolate Energy Bars with Chia & Flax
If you are looking for a high-protein, high-calorie, high-energy recipe for your active lifestyle– these are the bars for you! The dark chocolate, raisins and maple syrup make sure they taste delicious, while the chia seeds, flax meal and hemp hearts provide a sustained energy. I used Sunbutter since Ben is allergic to peanuts and tree nuts, but you can sub almond butter, peanut butter or any other nut butter of your choice.
Crispy Rice & Spicy Tuna Bites
Ben and I went to Panama a couple of years ago. During our time on a small island off Bocas del Toro named Bastimentos, we had an amazing afternoon/dinner at a little B&B called The Firefly.
