The Holidays are FINALLY over! Hooray!!! Work has finally begun to slow down and I have had some time to go snowboarding and cook for myself again. I made it through with only having two sick days. *Knock on wood* My herb plants have gotten huge, leaving me with an abundance of sage, rosemary and thyme. I also planted the bottom stalks of my scallions and they grow like an inch a day! If you have never tried replanting your scallions or celery you must try it! Here is a good article about plants you can re-grow: 12 Vegetables That Magically Regrow Themselves. I have tried, and succeeded, in regrowing bok choy, celery, scallions and lettuce. I think I will try the pineapple and avocado for kicks!

Dandelion Pumpkin Seed Pesto
This summer has been filled with delicious veggies from local farms! A while back, I picked up a bunch of dandelion greens. I had heard raves about their health benefits, but also knew they would be bitter. I was determined to find a unique way to put my dandelion greens to use when I found a recipe on The Kitchn for a Dandelion Pumpkin Seed Pesto.

Clementine {Orange} Chicken
Our new Whole Foods has been open for a few weeks now and it is awesome. I am so excited to be working such a great company, plus it is so nice to finally have good food available to us up in the mountains! The only downside is that I am tempted to buy everything, every time I work. Although I think I am going to need to pace myself when it comes to buying things from work.

Chicken Green Curry {Kaeng Kiao Waan Gai}
Colorado has been getting hit with lots of snow and cold weather recently, which has been making me crave hearty food. This classic Thai dish is hearty but healthy! Perfect for cold snowy days in Colorado or warm sunny days in Thailand. If you are feeling adventurous you can make your own green curry paste from my previous post here, if not you can purchase green curry paste from most stores. This recipe is the classic style for Thai Green Curry, but you can switch it up with whatever veggies or meat you desire.

It is a new year, which means healthy or budget friendly for most of us… and for once my late posting is going to be for your benefit! I am finally beginning my Thai and Balinese recipe binge. I ate so many different things while I was gone that I have been wanting to share with you. Lucky for you, Thai food is so flavorful and healthy and my Balinese recipes are very budget friendly!

While making unbelievable amounts of sushi at school the other night, it dawned on me that I have never shared any sushi recipes with you all. I was actually pretty surprised in myself, especially after working at Morimoto and telling you all about it! I promise I am here to make up for it with my spicy tuna and sushi rice recipes, as well as some cool tricks I learned in school.

Hello everyone! Welcome back, can you believe it is 2013?! This is the first year that I have decided NOT to make a resolution. My mom was talking about New Years Resolutions and it made me realize how often (for the most part) our own resolutions fade away each year. Last year my New Years resolution was to quit consuming so much processed sugar; I forgot about that one in a matter of months. I still try to consume as few GMOs as possible, but it is hard to not consume sugar when you are a culinary student who is also working during the day most of the time. So this year my “resolution”, if you want to call it that, is that this year is the first year of the rest of my life and it is going to be the most epic year yet. I graduate culinary school and will travel the world and discover where I belong, as well as start my career in the field of my dreams, as a chef!

{Basque Stage} Braised Lamb Shank, Goat Cheese Beet Ravioli & Confit Root Vegetables
As some of you may know, I am applying to the Basque Stage Sammic Rising Stars Scholarship. If I win, I get to do a 3-month stage at Xarma restaurant in San Sebastian, Spain! If you follow my blog, you probably already know about my addiction to food and experiencing new cultures, and how excited I get when I can combine the two! As part of my application, I had to create a dish to share. I wanted my dish to represent who I am, as well as my style of cooking.
