{Basque Stage} Braised Lamb Shank, Goat Cheese Beet Ravioli & Confit Root Vegetables
As some of you may know, I am applying to the Basque Stage Sammic Rising Stars Scholarship. If I win, I get to do a 3-month stage at Xarma restaurant in San Sebastian, Spain! If you follow my blog, you probably already know about my addiction to food and experiencing new cultures, and how excited I get when I can combine the two! As part of my application, I had to create a dish to share. I wanted my dish to represent who I am, as well as my style of cooking.

If you ever feel like you are lost and spiraling into a path far from what you imagined your life being, take a minute to think about what your passion is, what you love, and what you miss doing that you used to do. The last few weeks have been beyond stressful for me, and finally I found my happy place again. I remembered why I became so obsessed with blogging, cooking and everything food. What was missing that was causing me to go so crazy? For me, it was the loud music in my kitchen and cooking my own recipes at home for myself and only myself. I find a peaceful place in my kitchen when I am alone and am not trying to please anyone but myself. I can take as long as I want on the dish, while listening to music, without a care in the world. I am so happy that my new job gives me nights off because now I know what has been missing.
Shrimp Eggs Benedict
Working nights has really made me love breakfast. Since I have to be into work by 2:30 or 3, I don’t feel like I really have time to make a nice recipe for my blog on days that I work, but breakfast is a different story. I can wake up early, make a delicious meal, and still have time to photograph it before work. I never was a huge breakfast recipe fan before, but lately I have been loving making delicious, over-the-top breakfast dishes.

Wow, I feel like I am announcing one Friday after the other. Time flies… On the Hawaii front, my foot is slowly but surely getting better, only missed two days of work and my limp is almost gone. Some exciting news for this upcoming week, Iron Chef Morimoto is coming back into town to oversee how things are going at the restaurant. Stay tuned for the behind the scenes. Once again, Secret Recipe Club has provided me with another great blogger and recipe inspiration. This month I was assigned to Jeanette’s Healthy Living. Jeanette’s blog is filled with gorgeous food photos and so many delicious recipes, it was so hard to choose! I wanted to make her Roasted Red Pepper Carrot Pesto, Mango Panna Cotta w/ Kiwi Mango & Strawberries, Chinese Szechuan Spicy Fish Soup, and so much more. It was a tough choice, but I decided to make her Mango Avocado Pepper Salsa for my SRC post.

Wow, I feel like I have been going, going, going the past week or two. I have hardly had anytime to focus on my blog and get posts written; sorry if I haven’t been giving all of you the attention you deserve! I am working like a madman, but it is paying off! I have been training on grill and am LOVING it! Definitely need some practice but it is so exciting moving up in the kitchen finally.

Today is, yet again, the reveal day for Secret Recipe Club! I have been up to my ears trying to finish up school and get everything together to graduate while also preparing for my move to Hawaii in January. Needless to say I have hardly had any time to cook or come up with new recipes of my own. Luckily, Secret Recipe Club gave me a great blog this month to browse, which led me to a new festive recipe for the holidays.
