Throwback Thursday: Balsamic Baked Bruschetta Chicken
We all have those nights where we don’t want to make a complex recipe for dinner. We just want three things- a meat, a starch and a veggie. The problem I have with that meal is that it ends up being so bland! This Thursday’s throwback recipe is an easy way to dress up your chicken for those kind of nights and give your dinner an original taste.
I would like to thank Picky Palate for introducing me to this recipe last fall so that I can talk about it today and pass it onto you! This recipe combines delicious bruschetta with chicken and cheese to give you a brand new type of baked chicken breast.
Chili Basil Shrimp w/ Edamame Rice
I recently read an article about edamame and all of its amazing health benefits. If you don’t know much about edamame, it is a green soybean that is a great source of protein, contains all 8 essential amino acids and has no cholesterol of trans-fats. It is high in fiber and iron as well. I’ve like edamame for a while now, but this just makes eating it even better! It is a great addition to many meals and is definitely one to try if you haven’t yet. This dish is simple- marinated shrimp and rice with edamame. When sautéing the shrimp, deglazing the pan adds a ton of flavor that regular sautéing wouldn’t.
Mahi Mahi & Vegetable Medley w/ Lemon Basil Vinaigrette
After hearing about my plan to eat healthier, many of you voiced your desires for me to continue posting my comfort food posts. As much as I would love to be able to eat like that every day and not gain a hundred pounds, I can’t; but there is no need to worry! I stand before you with a recipe to prove that healthy can be just as delicious as all of my comfort food recipes.
This recipe is filled with nutritious vegetables and healthy fish, no cheese or empty carbs here, but I can guarantee that it has more flavor than most meals. I chose not to eat a starch with this meal, but it would go very well with a jasmine rice or white rice. The vinaigrette adds a delicious citrusy bang to the vegetables and fish.

Italian Sausage & Tortellini Soup
As I have mentioned numerous times before, I try not to eat pasta when I am not at work. So, to serve with the Double Tomato Bruschetta, I chose this recipe for an Italian sausage soup. Yes, I know that tortellini still counts as pasta, but it is a bit fancier and this recipe doesn’t use very much of it. This soup captures the essence of true Italian flavors- basil, tomato, garlic, oregano, and red wine- and is a great alternative to the typical Italian pasta dinner.
Butter Poached Lobster & Shrimp w/ Fresh Tomatoes & Basil
For my weekly cooking lesson with my mom, I killed and cooked my first lobster! We decided to make two different recipes with our lobsters. This is the first recipe we made, a very quick and simple way to cook lobster with a ton of flavor.
