Ritzy Spinach Artichoke Tartlets
The finalists were announced finally for the Ritz recipe contest, unfortunately I didn’t make finals. It’s okay though, there were over 1,400 entries… that is a lot of competition. Looks like I have to find another way to fund my culinary school. If anybody knows of any good scholarships or ways to get money for culinary school PLEASE let me know!
Here is my entry for the Ritz recipe challenge. I used crushed Ritz crackers in the tartlet dough to give it some extra flavor. These little bites will have your guests drooling over the appetizer table. I ended up eating the entire batch over a few days!
Chorizo, Poblano & Beef Tacos w/ Pepper Jack Cheese Sauce
Before I say anything about this recipe, I would like to announce the end of my comfort food bender. As good as all of the pizza and mac ‘n’ cheese has been, I am cleaning up my act. That’s not to say it won’t happen again sometime in the next few months, but for now I am going to be eating (and blogging) a bit healthier. I will be baking a bit though. For my final post of my bender, I give you these spicy, cheesy and tasty tacos.
First, I combined chorizo and beef for the base of these tacos, which makes the filling a bit more exciting. Then I added some spice with the seasonings and poblano chiles. To top it off, I made a pepper jack cheese sauce to pour over the tacos. Top them off with some lettuce and green onion and there you have it- a unique taco that will have you coming back for seconds (and more cheese sauce!).
Bison Chili Cheese Dogs
Watching the Food Network can be dangerous sometimes. A few of my guy friends recently learned why I am so addicted to it after they watched a couple shows one night with me. Every recipe you see makes your mouth water and makes your hungry. This week we all found ourselves drooling over a chili cheese dog from some small-town diner. Being from Britian, my friends had never eaten a chili cheese dog, so I had to show them what they were missing!
This chili cheese dog is a bit different from others because it uses as bison chili instead of beef. The bison does not taste much different than the beef, but gives it a bit of new flavor. This recipe can easily be made with ground beef instead. Before you eat these bad boys, make sure you have a napkin and aren’t wearing a white shirt!
Buffalo Chicken Mac ‘N’ Cheese Casserole
For some reason, I have been craving comfort food lately. It is probably not a good thing, considering I am going to Africa to the beach for three weeks, one month exactly from today! Oh well, what can you do. Cheese is one of my biggest weaknesses. I could probably eat an entire block of cheese as a snack, but I am getting off the topic.
Chorizo, Shrimp & Rice Stuffed Poblano Chiles
I recently entered this Ritz cracker recipe contest recently sponsored by Guy Fieri, which caused me to look through a bunch of his recipes for inspiration. I really love his recipes because they are always banger and packed with flavors. If you are not sure who Guy is, he is the punk-rock-looking, spiked hair guy from Diners, Dives, & Drive-Ins (as well as like ten other TV shows I feel like!).
This recipe is amazing because if combines the delicious flavors of chorizo and shrimp along with lots of cheese! I am a big fan of roasting peppers/chiles. It gives them an entirely different flavor. Roasted peppers and chiles also make the perfect dish for holding your delicious recipe ideas. I tweaked Guy’s original recipe a bit, but of all the stuffed pepper recipes I have made, I can safely say this one is my favorite. I highly recommend that you try it as well!
Throwback Thursday: Hot Spinach & Red Pepper Dip
This week’s Throwback Thursday recipe is a hearty spinach and pepper dip; great for a cold winter day. There is something nourishing about a warm cheesy dip with bread. This recipe is a great pick-me-up. It goes well with chips or bread and is a great recipe for a potluck or party, and can easily be doubled if need be.
Sausage, Potato & Cheddar Waffles
What could be better than sausage and cheesy hash-browns? Sausage and cheesy hash-brown waffles! All of your favorite breakfast foods, combined into one delicious waffle. An old Everyday With Rachel Ray magazine gave me inspiration for this recipe.
These are great for a weekend breakfast- probably especially good for a weekend hangover as well. I must warn you, these waffles are not meant to be made healthier… I tried making them with turkey bacon also and they turned out a bit bland. The sausage gives a ton of flavor to the waffle, so if you insist on leaving it out, be sure to add other seasonings. I think that these waffles would be really good with onion added to the mixture as well. Play around and combine your own flavors if you would like!
Chipotle-Lime Shrimp Taco Salad w/ Cilantro Vinaigrette
You know those nights when you have an entire meal planned out in advanced, but when dinner time roles around you just don’t feel like eating that oh-so-exciting dish? Well, last night was one of those nights. As delicious as sun-dried tomato and feta stuffed chicken sounded, I just wasn’t in the mood for those flavors. I wanted spice and citrus. I decided to save that for another night. Instead, this is what I came up with.
The cilantro vinaigrette pulls this dish together. It adds a nice tangy flavor that is a great compliment to the spicy shrimp. Roasting the tomatoes gives them move flavor and juice, making this recipe even more delicious! I was planning on eating this with guacamole and salsa, but tasted it and realized it didn’t need any additions and was perfect as is.
Double Tomato Bruschetta
This week I was asked by friend to cook something Italian for dinner. For me, the first thing that comes to mind when I think of Italian food is pasta. I decided against making pasta, since I eat it at work constantly. Instead, I chose to make this double tomato bruschetta along with an Italian Sausage and Tortellini Soup. Bruschetta is easy to make, and is a great appetizer for guests. The addition of sun-dried tomatoes to the bruschetta gives it a different texture and a little bit of a kick. These little snacks were very popular.
Pizza Casserole
Recently, I have been thinking about how great it would be to do catering. I have also been cooking for friends quite a bit, which I love. Both things involve cooking for a crowd, which can be hard to do. The more I do it, the more fun it gets. It is hard to think up original recipes for large groups sometimes, so I am really excited to share this one. This week I needed a meal to feed 14 friends. I didn’t want to do chili again, so I began to brainstorm and search the web. Casserole recipes are great for large groups and pizza is great for parties, which makes this pizza casserole the ultimate party dish. The original recipe that I found, form Country Kitchen Cooking, used pasta instead of breadsticks. Since I work at Noodles & Company, I decided against using the pasta. I think the breadsticks give it much more flavor. I made my green bean casserole to go with the meal and help my ski bum friends get some nutrients into their dinner. This spin off pizza is easier to make and won’t keep you in the kitchen for the entire party!
