Stuffed Cupcakes w/ Homemade Buttercream Frosting
It was recently one of my best friend, Kevin’s, 21st birthday. We have been friends since the 6th grade, so I felt the need to bake him very special birthday treats! I don’t really like to mess with all sorts of baking flour, so I just bought packaged cupcake mix. I think that you can still get creative by making your own frosting and adding your own twist to cupcakes- such as filling them with little tasty surprises like cookie dough and raspberries!
These cupcakes were devil’s food cupcakes with a homemade buttercream frosting that is to die for. For an extra treat, I cut out a small circle of each and filled half of the cupcakes with cookie dough and the other half with raspberries and strawberry syrup. These cupcakes are easy to make for those of you who don’t feel that you are a baking expert, but still are a bit above your average cupcake.
Throwback Thursday: Sweet & Spicy Salmon w/ Roasted Potatoes
This week’s throwback recipe is very memorable for me. I cook frequently for friends, especially my roommate. She is not a big seafood fan, but I have made her eat a few things this winter. This was one of the few salmon recipes that she liked, so I felt pretty accomplished! I think it also helped that I paired it with her favorite thing that I make- oven roasted potatoes. They are so easy, but so delicious!
So this week you get two throwback recipes. The first, a spicy salmon filet with a sweet orange glaze. The brown sugar and orange marmalade offset the spicy for a sensational taste. The second, seasoned oven roasted potatoes. These are easy to make and serve as a great side dish for tons of different meals. Definitely one to keep in mind.
Glazed Pork Tenderloin w/ Caramelized Pears & Sweet Potatoes
As a kid, pork chops and applesauce were always a family dinner highlight. In my family it was known as “pork chawwwps and apple sauwwwce”. To this day I still love it, but I also love exploring different sweet combinations for pork. Recently, I discovered this delicious recipe in a cookbook from my grandma called America’s Best Lost Recipes. This recipe has that same sweet kick that applesauce gives pork, but includes more nutritious components.
To make sure that you don’t overcook your pork, be sure to have a meat thermometer handy. Also, I made sure that I cooked the potatoes and pears long enough before cooking the pork, to ensure that they were nice and soft. This dish is easy and great to feed a large group.
Throwback Thursday: Sweet & Sour Shrimp Stir-Fry
Stir-fries are great for a quick week-night meal. You can combine so many different flavors, which means endless ideas. This particular stir-fry was my first attempt as making a sweet and sour sauce. I apologize for the photo quality, it was from my early days of blogging and taking food photos. It reminds me how far I have come and how much further I can go. So, for a healthier dinner, try this tasty sweet and sour dish.
Throwback Thursday: Creme Brulee
I am really excited about this Thursday, not because of the throwback recipe, but instead for my new piece of cooking equipment- a Kitchen Aid mixer! Anybody who loves to cook feels the excitement that I have been experiencing. I keep telling my friends and they don’t quite seem to get it, but they will taste it once I go off on my baking spree… Good news for my readers, possibly bad news for me-lots of delicious desserts. With the excitement of desserts I decided to post my first creme brulee recipe. Even though it doesn’t use a Kitchen Aid mixer, it is still a delicious dessert.
Before I made it, I always thought of creme brulee as a fancy and difficult dessert to make. Turns out, it really isn’t that hard to make. It is a delicious and rich dessert that I think everybody should try at some point. I also think it would be really good with fruit topping, if anybody is up to it let me know how it tastes!
Blueberry-Lemon Cobbler
I have finally made my first sugar-free, gluten-free dessert! Well, except for the vanilla frozen yogurt that I ate with it…I have to say it was amazing! This recipe shows how easy it is to cut out white sugar and gluten from your desserts without sacrificing any flavor. Of course, you can always make the dessert the old fashioned way if you want.
I was given two bins of blueberries this week by my mom, so of course dessert was on the menu. Conveniently, I saw multiple blueberry dessert recipe posts the day I came home, including one for blueberry cobbler. Cobbler is a great dessert for a small kitchen, because it doesn’t require the rolling of any dough. It is a great dessert for the winter because of the warm gooey fruit. Even in winter, adding vanilla ice cream is definitely recommended.
Cinnamon Apple Frangipane Tart
For Christmas this year, my Mom hadn’t planned on having a dessert. Since I am giving up excess processed sugars for my New Year’s resolution (no more sugary drinks or desserts… yikes!), I insisted that we have dessert on Christmas. We decided to go with a recipe that my Mom makes all of the time, the classic apple tart. This tart is easy to make and so delicious, definitely one to try!
Trailer Trash Pot Roast
My friends and I decided to have an early holiday dinner to celebrate Christmas this week. A little while back, I came across this recipe on the Sticky, Gooey, Creamy, Chewy blog, but hadn’t gotten a chance to make it. A pot roast is a great thing to make during the holidays, because you can begin cooking it early, then cook everything else while it finishes cooking. This recipe combines Coca Cola and Chili Sauce for a perfect combination of sweet and spicy.
