Vegetarian Mexi-Quinoa with Corn & Zucchini
Today I have an easy mid-week, HEALTHY Mexican meal for you. I love Mexican food- unfortunately, it is usually not the healthiest. My work is currently having a competition called Green Trek. You log points for different activities and healthy eating. So naturally, I have been trying to eat a bit healthier. And yes, I know I have been obsessing over quinoa bowls lately. That is because they are so easy and you can change up the flavors every time!
Spring Green Quinoa w/ Lemon, Basil & Acovado Dressing
Is is spring or summer? Sometimes, it is hard to tell up here. I have to say, I am torn about the title of this dish. Yes, the asparagus and peas are in season in the spring. BUT, where I live they are kind of in season all summer. In all reality, they are available year-around as well. Regardless, you should add this dish to your to-make list.
Spring Pea & Arugula Risotto with Mint
Wow, am I happy to have my blog back! As some of you may have noticed, Savour the Senses went MIA for about a week. 🙁 I was going to switch web hosts, but realized how difficult it is to transfer my database and files without a web genius’ help! Luckily I was able to go back on my decision and didn’t lose anything. On another note, summer has arrived in Summit County and it is fantastic. My garden is planted outside and my greens just sprouted today!
Wild Rice & Vegetable Stew
I know it may seem weird, but I have still eaten quite a bit of soup here in Hawaii. I love making soups and stews because I feel like it gives me room to be creative. I can throw whatever I want into a soup/stew and whip it up pretty quickly. Because of that, soups are a great way to use up leftover ingredients in your kitchen. Also, they are great if you don’t have time to stand over your stove while making dinner. You can be getting ready, taking care of the kids or just kicking back watching Top Chef while your soup works its magic.
Detox Green Machine Soup
I got rained on for the first time the other day riding my bike to the beach. Definitely the first of many I think. I guess there are prices to pay when you live in Paradise! I only have a bike, so I ride it everywhere, including to and from work. Luckily I work in a kitchen with a bunch of sweaty guys anyway so it is OK that I show up drenched in sweat… Riding my bike has been a great workout for me though! I forces me to workout, which is perfect for my type of personality… 🙂 I know if that is not your case, it can be hard to find time or motivation to workout, I had the same problem. If that is how you feel, this is a recipe for you!
Featured Foodie Friday: QlinArt
Just a quick Hawaii update before I introduce our awesome guest blogger for today. I have finally moved in and (I think) got everything I need- i.e. bedding, my sweet air mattress, a bike, a surfboard, staples- after spending almost all the money I had to get me on my feet. Keep your fingers crossed for my stage at Morimoto Waikiki tomorrow night! It is so great here, everyone seems super nice and the weather WAY beats Colorado’s freezing winter! Although I will admit I’ve got quite the sunburn at the moment, that’s OK though. I like to refine my eating and exercising habits after the holiday bingeing is over. I recently did a cleanse to start out fresh before my move. How’s the new year treating everybody so far? I am down to only 3 days left in colorful Colorado before heading to the beaches of Hawaii for eight months- no I am not excited at all…. Right. I am like a little kid before Christmas, I am dying waiting for Friday to arrive! I have been trying to exercise more and eat healthier before I go, but we all know how hard that is. For some reason, when you are trying to NOT eat certain things, they are ALL you crave.

Zucchini Eggplant Lasagna
The cool air is finally sweeping across Colorado. Friends in the mountains said it was even snowing at the tops of the mountains! It is kind of a relief after the hot summer we had. Even with the cool weather, my garden is still overflowing with zucchinis. Other gardens are overflowing with eggplants, so of course I am continuing to add to my long list of zucchini recipes; and some eggplant ones as well.
