Feta-Basil Bison Burgers

Ingredients
  

  • 1 lb ground bison or beef
  • 1/2 cup crumbled feta cheese
  • 2 tbsp fresh basil minced
  • 1 tsp salt
  • 1/2 tbsp black pepper
  • 1/4 cup mayonnaise
  • 3 tbsp sour cream
  • 1/2 shallot minced
  • 1 clove garlic minced
  • 3 tbsp basil minced
  • 2 tbsp Parmesan cheese
  • 1/4 tsp black pepper
  • Pinch of salt
  • 1/4 onion sliced
  • 1/2 cucumber sliced
  • 2/3 cup cherry tomatoes
  • 2 tbsp olive oil
  • Extra salt and pepper
  • 4 hamburger buns

Instructions
 

  • Preheat oven to 425F. In a medium bowl, mash together the ground bison, feta, 2 tbsp basil, salt and pepper.
  • Divide the meat into four sections, roll into a ball, then make into hamburger patties.
  • Combine mayonnaise, sour cream, Parmesan, shallot, garlic, 3 tbsp basil, 1/4 tsp pepper and salt in a food processor and process until smooth.
  • Drizzle the tomatoes with olive oil, salt and pepper and bake at 425F until soft (about 10-15 minutes).
  • Cook the hamburger patties to desired doneness on the grill.
  • Layer the hamburger bun, burger, sauce, onion slices, cucumber and tomato to serve.
