Shaved Asparagus & Prosciutto Salad

Ingredients

  • 2 lb asparagus
  • 1 package mixed Italian Micro Greens
  • 1/2 c Prosciutto crumbles
  • 2 T lemon juice
  • 1/4 c olive oil
  • 1/4 c shredded Parmesan cheese
  • Fresh cracked pepper to taste

Instructions

  • Using a potato peeler, shave the asparagus into thin ribbons.
  • Toss all ingredients in a large bowl.
  • Top with extra Parmesan and fresh cracked pepper to serve.
