Simple Crispy Roasted Chicken
As the cool weather becomes more common, I find myself wanting to sit and sip my tea slowly. The idea of a big extravagant dinner is not always there. Sometimes it is better for the classics. Roasted chicken reminds me of my childhood. For me, it’s hard to beat a nice crunchy piece of chicken skin.
Lemon-Ginger Chicken Orzo Soup
This cooler weather also brings the dreaded early season colds and allergies. It is important to build up your immune system this time of year. I have also had horrible allergies this year, which I have never had before. When you can’t stop sniffling, sometimes all you need is some chicken noodle soup.
Blackberry Ginger Chicken
These longer days have been so great! I love getting up after the sun has come up and going to bed when the sun is just finally setting. For the most part, my vegetable garden is loving all the sun, too! Although, we have most definitely still had our fair share of rain here in the Rocky Mountains. I made this recipe on a lazy, rainy day a little while back.
Asian Chicken Noodle Soup
The week after daylight savings is always a bit rough for me. As if preparing for the long, cold winter ahead wasn’t hard enough- now we have to watch the sun set before we eat dinner! It is easy to fall into the darkness and be bitter, but it is also easy to turn Bob Marley onto my Pandora (pretend I am on an island) and cook up some food that will make me smile. A positive outlook on the winter ahead is the only way to make it through!
Coconut-Lime Chicken w/ Coconut Rice
Sometimes I wonder what people did before food blogs, FoodGawker, Yummly and Food Network began… All I know is that my cooking wouldn’t be nearly as diverse if it weren’t for them. I know there is a lot of hype about coming up with your own recipes, but personally I like hearing about everybody’s great ideas. It enables me to think out of the box and develop my own recipes as well. And sometimes, I just enjoying cooking a recipe straight from another blogger- that is exactly what I did for this. Cheesy Mexican Chicken
Can you believe it is already almost Father’s Day?! Father’s day falls on my own dad’s birthday every few years- which makes the day extra special for him. If I know dads- I know that food will win them over anytime! So, spice things up and surprise your own dad with this cheesy, rich, to-die-for (no pun intended) Mexican chicken recipe.
Clementine {Orange} Chicken
Our new Whole Foods has been open for a few weeks now and it is awesome. I am so excited to be working such a great company, plus it is so nice to finally have good food available to us up in the mountains! The only downside is that I am tempted to buy everything, every time I work. Although I think I am going to need to pace myself when it comes to buying things from work.
Rosemary Red Wine Poached Chicken
It may be spring where most of you are, but in the mountains spring means warm sunny days scattered throughout big wet snowstorms. We have started lots of herbs in our window, but are just waiting for REAL Summit County spring (aka summer) to come so that we can plant our vegetables outside! As the saying goes, April showers bring May flowers right? Next time you are stuck inside on a rainy day, enjoy this comforting and absolutely delicious dinner. The recipe calls for only a half a bottle of wine, which means some left over to enjoy while you relax and listen to the rain.
Chicken & Broccoli Grilled Cheese
I really don’t know why I haven’t thought of this before. I love Mac ‘N’ Cheese and I love grilled cheese sandwiches, but for some reason I have never made my favorite Macs into grilled cheeses. I have a feeling that this is going to be a first of many Mac-inspired paninis. I am also thinking I might turn some of my favorite paninis into Mac ‘N’ Cheese (Caprese Mac with a mozzarella cheese sauce sound good to anyone else?). Just the though is making me hungry!
Chicken Green Curry {Kaeng Kiao Waan Gai}
Colorado has been getting hit with lots of snow and cold weather recently, which has been making me crave hearty food. This classic Thai dish is hearty but healthy! Perfect for cold snowy days in Colorado or warm sunny days in Thailand. If you are feeling adventurous you can make your own green curry paste from my previous post here, if not you can purchase green curry paste from most stores. This recipe is the classic style for Thai Green Curry, but you can switch it up with whatever veggies or meat you desire.
