Buffalo Cauliflower & Chickpea Salad
Whether you are trying to eat less meat, or just are looking for (mostly) healthy and easy lunch ideas, this recipe is for you. I imagine that one of the hardest things about not eating meat would be missing out on chicken wings. This recipe brings the spirit of buffalo wings into a re-imagined (and delicious!) vegetarian salad. In a world where it seems nearly impossible to come up with a unique recipe, I have to say I am very proud of this Savour the Senses original!
Kerabu Mangga Timun {Mango Cucumber Salad} w/ Kaffir Lime Dressing
To pair with my Malaysian Curry Laska, I decided to make a light salad. The RawSpiceBar box also had a Kaffir Lime spice blend, which I though would be perfect for a cucumber salad. I ended up making a dressing out of the spice blend and tossing it with shaved mango and cucumber.
Tzaziki Sauce
In recent efforts to reduce my added sugar intake, I bought a container of plain yogurt. Unfortunately my morning breakfast is just not nearly as delicious with plain yogurt. After about a week and a half I realized that the rest of the yogurt was just sitting in my fridge, waiting to spoil. Naturally Greek food came to mind.
Shaved Asparagus & Prosciutto Salad
I am so excited that Spring is here! I love this time of year because it is the beginning of vegetable surprises at the Farmer’s Markets and grocery stores. Where I live, it is officially asparagus season. The organic asparagus at the grocery stores around here are MASSIVE! I have never seen such huge asparagus. While I usually prefer skinny asparagus for roasting, these jumbo asparagus are perfect for a shaved asparagus salad! All you need is a potato peeler to create beautiful ribbons that will add great texture and flavor to any salad.

Heirloom Tomato Salad w/ Nectarine & Proscuitto
After being back in Colorado for a couple of weeks, I finally was able to go to the farmers’ market! I went to the Vail Farmers’ Market last week and stumbled upon some really great produce and meat. The Vail market is nice because you are so much closer to the farmers from the Western Slope. I was able to fill over half of a grocery bag with all kinds of veggies for only $10! I also got some great wine-poached goat cheddar and sage goat cheddar from Jumpin’ Good Goat Dairy, as well as a delicious grass-fed leg of lamb from Crystal River Meats. While all of this was fantastic, I have to admit that the perfectly-ripe assortment of heirloom tomatoes were the highlight of the market for me.
Beet & Apple Salad w/ Honey Cider Vinaigrette
In Colorado, “April showers brings May flowers” means next to nothing. They have been getting feet of snow then 80 degree weather this month! In NYC the saying is pretty accurate. Springtime in the city really does feel like spring. The trees here are so pretty with beautiful blooming flowers!
Featured Foodie Friday: The Yummy Bits
Wow, I feel like I am announcing one Friday after the other. Time flies… On the Hawaii front, my foot is slowly but surely getting better, only missed two days of work and my limp is almost gone. Some exciting news for this upcoming week, Iron Chef Morimoto is coming back into town to oversee how things are going at the restaurant. Stay tuned for the behind the scenes. Italy Pt. 3- Cooking at the Castle
Finally, to the cooking part of my cooking trip! We headed to a small town called Spongano the morning after our welcome dinner in Lecce. This is where the castle was located. Some people may call this a manor house, but call it what you want. There were like 20 bedrooms and bathrooms and an awesome pool and a garden filled with all sorts of fruit trees… I’d call that a castle. (Also, thanks to my mom, the host of the trip, for most of these photos! I was too preoccupied to take pictures most of the week. Strawberry Vinaigrette
I don’t want to jinx it, but I think the summer heat is finally dying out; of course now that I said that it will probably be over 90 next week. That’s ok though because you need a few more hot sunny days to try this sweet vinaigrette recipe! I got the idea from the blog Coconut & Lime and figured it would be perfect for a nice sweet summer salad.
