Goat Cheese Sweet Potato Cheesecakes w/ Honey Roasted Grapes
Everybody watch out, I have had a creative moment so beware. I’m sure we all suffer from the same feeling; you know the one where you feel like you never have your own good recipe ideas and everybody else has the coolest ideas, so you just want to copy them? I am always trying to think up my own recipes, but very rarely do I actually think up a blog-worthy idea. So as you can guess I am VERY excited to share this recipe with you; it is my very own recipe brainchild. The one thing you will notice about my own recipes is that they always have some outrageous title, way longer than any should probably ever be. But just think of it as a way to attempt to show how deliciously packed the recipe is!
Vegetarian Sweet Potato & Quinoa Enchiladas
In the spirit of Meatless Monday…This recipe is a vegetarian dish for meat eaters. You will not even miss the meat! The quinoa and cheese provides the protein that you may be wanting from the meat. You can also add black beans, but I chose to leave them out for Ben. And I have to admit, as much as I am an advocate for making everything from scratch, I cannot stop buying the Roberto’s Vegetarian Burrito Sauce used in this recipe. It is just TOO good, you need to try it.
Mango Chicken Buddha Bowl
It snowed almost two feet over the last two days. How is this possible?! I have all my vegetable starts ready to go into the garden. Ben and I were going to finish building the bed this weekend! Welcome to spring in Summit County, Colorado…
Brown Butter Balsamic Pork w/ Sweet Potatoes & Kale
The Holidays are FINALLY over! Hooray!!! Work has finally begun to slow down and I have had some time to go snowboarding and cook for myself again. I made it through with only having two sick days. *Knock on wood* My herb plants have gotten huge, leaving me with an abundance of sage, rosemary and thyme. I also planted the bottom stalks of my scallions and they grow like an inch a day! If you have never tried replanting your scallions or celery you must try it! Here is a good article about plants you can re-grow: 12 Vegetables That Magically Regrow Themselves. I have tried, and succeeded, in regrowing bok choy, celery, scallions and lettuce. I think I will try the pineapple and avocado for kicks!
Sweet Potato Gnocchi w/ Sage Brown Butter
Summer has officially ended. There are no more leftover zucchinis lurking in my fridge, the cute little baby heirloom tomatoes are gone, and my herb plants have had enough. I just bought a new pair of snow boots, I added an extra blanket to our bed, and Arapahoe Basin has officially opened the white strip of death (this is when the ski hill opens with only one run).
Spiced Sweet Potato Chips
How’s the new year treating everybody so far? I am down to only 3 days left in colorful Colorado before heading to the beaches of Hawaii for eight months- no I am not excited at all…. Right. I am like a little kid before Christmas, I am dying waiting for Friday to arrive! I have been trying to exercise more and eat healthier before I go, but we all know how hard that is. For some reason, when you are trying to NOT eat certain things, they are ALL you crave.
Sweet Potato Cupcakes w/ Toasted Marshmallow Frosting
Just incase you didn’t know, the holidays are definitely not the right time to try to get in shape for the beach… But it was worth every bite. It was so great to see my brother, who lives in NYC now, and my cousins who I haven’t seen in years. We had a brunch with my dad’s side of the family on Christmas Eve and dinner with my mom’s side of the family on Christmas Day. Lucky for me, my mom is a great cook so I got to sit back and relax for most of it, except I couldn’t stop myself from making these amazing cupcakes for dessert. Sorry for posting two cupcake recipes in a row, but I had to share these before your New Years healthy eating kicked in! =)
Sweet Potato & Apple Casserole w/ Pecan Crunch Topping by Dinner With Denise
Can you believe that it is almost Christmas?! What are your plans for the holidays? I will be spending Christmas in Denver with parents, brothers and a few other relatives. I am really excited about this Christmas because I hardly get to see my brothers any more, plus I will be moving far, far away in exactly two weeks from today. I hope that the holidays haven’t stressed you out, but if you are panicking about what you are going to cook for dinner with your family this guest post is perfect for you. I would like to welcome Denise from Dinner With Denise this friday. She is sharing one of her delicious side dishes for the holidays. This is a great alternative to the typical sweet potatoes and marshmallows if you feel like you always serve that dish during the holidays. With that, I give you Denise:
