Soft Boiled Egg with Crispy Kale Chips & Whipped Goat Cheese
Have you ever had a soft-boiled egg? It’s one of my favorite things and I’m so excited to share this unique recipe with you because it combines another favorite food – KALE CHIPS!

Pinto & Chorizo Charro Beans with Kale-Lime Slaw

Mahi Mahi with Grilled Kale & Scallion Pesto
It is harvest season! That time of the year when you don’t know what to do with your copious amounts of (insert vegetable here). For me, it is lettuce, kale and zucchini. I try to eat salads daily, but it seems like it has all grown back by the time I finish my stash in the fridge. After letting some of my kale sit in the fridge for a little too long, I knew I needed to use it up ASAP. I also had half of a bunch of green onions that were looking pretty sad. Voila! Sad looking vegetables turned into a match made in heaven.
White Wine Braised Meatballs, Kale & Spinach
Autumn is in full swing here; although Winter may be making an appearance very soon. The last of the leaves are falling off of our Aspen trees outside my window and the ground has lost it’s green tint in exchange for an amber glow. These views and the cool fall evenings make you want to cuddle up with a nice cozy meal. This meals is perfect for this time of year.
Kale Pesto Quinoa w/ Poached Egg
Hey, I warned you didn’t I? Another quinoa bowl. This one was especially satisfying because I used my first harvest of kale from my garden! No matter what you grow, it will always taste better freshly harvested from your own garden. No farmer’s market or grocery store can create that feeling of accomplishment that growing your own food can.
Blooming Onion w/ Herbed Béchamel Sauce
There has been a lot going on with our society lately. It is great to see our country moving in the right direction, with social equality (yay gay marriage!) and food quality. This past week, the FDA took partially hydrogenated oils OFF the GRAS (generally recognized as safe) list! All companies have three years to phase these harmful oils out of our food system. Also, big name companies like Subway, Kraft and General Mills have taken the pledge to remove artificial ingredients from their food. It seems that we have voted with our dollars and won!
Shaved Asparagus & Prosciutto Salad
I am so excited that Spring is here! I love this time of year because it is the beginning of vegetable surprises at the Farmer’s Markets and grocery stores. Where I live, it is officially asparagus season. The organic asparagus at the grocery stores around here are MASSIVE! I have never seen such huge asparagus. While I usually prefer skinny asparagus for roasting, these jumbo asparagus are perfect for a shaved asparagus salad! All you need is a potato peeler to create beautiful ribbons that will add great texture and flavor to any salad.
Brown Butter Balsamic Pork w/ Sweet Potatoes & Kale
The Holidays are FINALLY over! Hooray!!! Work has finally begun to slow down and I have had some time to go snowboarding and cook for myself again. I made it through with only having two sick days. *Knock on wood* My herb plants have gotten huge, leaving me with an abundance of sage, rosemary and thyme. I also planted the bottom stalks of my scallions and they grow like an inch a day! If you have never tried replanting your scallions or celery you must try it! Here is a good article about plants you can re-grow: 12 Vegetables That Magically Regrow Themselves. I have tried, and succeeded, in regrowing bok choy, celery, scallions and lettuce. I think I will try the pineapple and avocado for kicks!
Kale Chips
It has finally hit me that I will be leaving Colorado in just about one month. I was born and raised in Colorado. I grew up with the mountains and snow sports. I had my heart set of going to college out of state, but when the time came I found myself sticking around for the mountains. I have lived in the mountains each winter while in college and have molded my life around snowboarding. With graduation only about a week away, I am still in shock. First, I can’t believe I am already graduating (a semester early!). Second, I can’t believe that I am moving to the BEACH!
