Whether you are trying to eat less meat, or just are looking for (mostly) healthy and easy lunch ideas, this recipe is for you. I imagine that one of the hardest things about not eating meat would be missing out on chicken wings. This recipe brings the spirit of buffalo wings into a re-imagined (and delicious!) vegetarian salad. Holy cow have I been busy! Between school and work, I am now a catering production cook for Whole Foods in Boulder, I have not had any time to cook for myself, let alone photograph recipes! I am learning so much between school and work, but I could really use some down time; there are just not enough hours in the day. One thing that has made me a bit more cheerful is the fact that it SNOWED here in Colorado last week!! The ski resorts are starting to all open and I finally get to go snowboarding for the first time after my winter in Hawaii, I can’t wait! Life is good. I was sick when I left Colorado, but for some reason being sick in Hawaii does not feel as bad as being sick in Colorado; I think it’s because of the humidity. My friends greeted me with a lei and champagne at the airport, not too shabby! I have a few interviews at restaurants around the area this week, one of which is Morimoto’s restaurant in Waikiki! So it has finally sunk in that I am moving to Hawaii… As your are reading this I am probably flying to San Francisco or from there to Hawaii! Packing for eight months in one big suitcase and one carry on is mortifying. Thank god I had my friend there for moral support and to help me actually get things from my floor into the suitcases!
I couldn’t be happier to introduce our guest blogger today, Kimberly from Badger Girl Learns to Cook. When she sent me this recipe I literally turned around and made it within five minutes. I used A1 steak sauce because I didn’t have any BBQ but it was still SO good! I also dipped chicken in it and WOW, so amazing. There are very few things that I would not put Buffalo sauce on. I love the flavor and all the varieties of it. I have made all sorts of buffalo recipes, including one of my favorites the Buffalo Chicken Mac’N’Cheese Casserole. That recipe was some serious comfort food, but this recipe is a bit fancier and not so hard on your arteries. It is a good idea to grill the chicken for this recipe, but you can also bake it if you do not have access to a grill. I baked it when I originally cooked it.

Super Bowl Sunday means finger food and a messy kitchen right? Wrong. This Sunday you can make a delicious- and filling- full meal. Plus, it won’t keep you in the kitchen all day away from the company. Of course, this doesn’t mean you can’t always make some messy finger food to go with it! This chili, adapted from my mom at Cooking With Michele, has the buffalo wing flavor, combined with healthy ingredients like carrots and celery. Adding blue cheese to the chili and the garlic bread completes the dish and gives you an authentic buffalo wing feel without the mess- or the fat!
