In Colorado, “April showers brings May flowers” means next to nothing. They have been getting feet of snow then 80 degree weather this month! In NYC the saying is pretty accurate. Springtime in the city really does feel like spring. The trees here are so pretty with beautiful blooming flowers!

HELLO WORLD! I am officially back in Boulder. I moved into an apartment all alone (my first time EVER living alone). It definitely has it’s ups and downs, but I am getting used to it. I started school this week at Escoffier too! The first week is all ServSafe, which is health and sanitation, so it is kind of boring; but next week we get started in the kitchens!
Green Olive Sauce
If you ever feel like you are lost and spiraling into a path far from what you imagined your life being, take a minute to think about what your passion is, what you love, and what you miss doing that you used to do. The last few weeks have been beyond stressful for me, and finally I found my happy place again. I remembered why I became so obsessed with blogging, cooking and everything food. What was missing that was causing me to go so crazy? For me, it was the loud music in my kitchen and cooking my own recipes at home for myself and only myself. I find a peaceful place in my kitchen when I am alone and am not trying to please anyone but myself. I can take as long as I want on the dish, while listening to music, without a care in the world. I am so happy that my new job gives me nights off because now I know what has been missing.
Shrimp Eggs Benedict
Working nights has really made me love breakfast. Since I have to be into work by 2:30 or 3, I don’t feel like I really have time to make a nice recipe for my blog on days that I work, but breakfast is a different story. I can wake up early, make a delicious meal, and still have time to photograph it before work. I never was a huge breakfast recipe fan before, but lately I have been loving making delicious, over-the-top breakfast dishes.
Featured Foodie Friday: The Yummy Bits
Wow, I feel like I am announcing one Friday after the other. Time flies… On the Hawaii front, my foot is slowly but surely getting better, only missed two days of work and my limp is almost gone. Some exciting news for this upcoming week, Iron Chef Morimoto is coming back into town to oversee how things are going at the restaurant. Stay tuned for the behind the scenes. Sweet Onion Dressing
Blackened Swordfish Tacos w/ Mango Avocado Salsa
It has been a rough past few days for me. On Friday I went swimming off one of the piers near Waikiki; while climbing up the rocks to get out, I slipped and stepped on Wana, a Hawaiian sea urchin. Let me tell you, you do NOT want to come in contact with a sea urchin. Ever. I had probably over 40 spines in my big toe and second toe. A nice local man helped me pull a lot of them out, but I still had a dozen or more that had broken off in my toes. After missing two days of work and spending the weekend soaking my foot in vinegar they are still not completely out or healed. Not to mention I also got almost 20 mosquito bites Friday as well…. Even in Hawaii, life is not always perfect.
Mango Avocado Salsa {SRC Post}
Once again, Secret Recipe Club has provided me with another great blogger and recipe inspiration. This month I was assigned to Jeanette’s Healthy Living. Jeanette’s blog is filled with gorgeous food photos and so many delicious recipes, it was so hard to choose! I wanted to make her Roasted Red Pepper Carrot Pesto, Mango Panna Cotta w/ Kiwi Mango & Strawberries, Chinese Szechuan Spicy Fish Soup, and so much more. It was a tough choice, but I decided to make her Mango Avocado Pepper Salsa for my SRC post.
Cheddar Ale Soup
It has been POURING rain here for about a week now; like serious torrential downpour. It is funny how our bodies adapt to the climate we are living in. If I was in Colorado, a rainy 65-70 degrees would be refreshing, but here it is COLD! So even though I’m sure many of you picture me lounging on the beach everyday, surfing at sunset, etc… I can assure you that other than my daily trek to work, I am couped up in my house wanting the same thing you want- comfort food and soup. Luckily I had an awesome recipe saved from a while back- Cheddar Ale Soup from Tracy’s Culinary Adventures.
Spaghetti Squash & Meatballs
Happy Monday everybody! If you read my last post, you heard my side comment about my dream of opening a food truck. Many of you were intrigued by this, so I figured I would share a little bit about that with you all. I just love the idea of food trucks, being able to go where ever you want, the beach, a ski resort, main street, etc. I also love the fact that once you have made enough money you can pack up and go. Gives you time to do other things that you love. I would want to have a sandwich food truck; I love sandwiches. I think there are just so many possibilities and ways to be creative. My sandwiches would be super unique and out there, with the option to build your own as well. So there is a little bit about my dream of owning a food truck, haha. And yes, the squash are back. You didn’t think that winter was over yet did you?
