There are a thousand methods for caramelizing onions and each chef will tell you that their way is the best. High heat, stirring a lot? Low and slow? Water? No water? Salt? No salt? No matter the method, caramelized onions make a fantastic addition to so many dishes!
Blooming Onion w/ Herbed Béchamel Sauce
There has been a lot going on with our society lately. It is great to see our country moving in the right direction, with social equality (yay gay marriage!) and food quality. This past week, the FDA took partially hydrogenated oils OFF the GRAS (generally recognized as safe) list! All companies have three years to phase these harmful oils out of our food system. Also, big name companies like Subway, Kraft and General Mills have taken the pledge to remove artificial ingredients from their food. It seems that we have voted with our dollars and won!
Sage French Onion Soup
It is funny being in culinary school at night because I never cook for myself at home! I am looking forward to my weekends so that I can use up all the meat and fish in my freezer! This weekend was too hectic for that though; I was a chef assistant for a 170 person PLATED DINNER wedding! I am loving getting all the experience! Luckily I have a lot of soup made and in my freezer as well, for those busy days. With the cold weather coming, is a great time for soup!

Wow, I feel like I am announcing one Friday after the other. Time flies… On the Hawaii front, my foot is slowly but surely getting better, only missed two days of work and my limp is almost gone. Once again, Secret Recipe Club has provided me with another great blogger and recipe inspiration. This month I was assigned to Jeanette’s Healthy Living. Jeanette’s blog is filled with gorgeous food photos and so many delicious recipes, it was so hard to choose! I wanted to make her Roasted Red Pepper Carrot Pesto, Mango Panna Cotta w/ Kiwi Mango & Strawberries, Chinese Szechuan Spicy Fish Soup, and so much more. It was a tough choice, but I decided to make her Mango Avocado Pepper Salsa for my SRC post.

Wow, I feel like I have been going, going, going the past week or two. I have hardly had anytime to focus on my blog and get posts written; sorry if I haven’t been giving all of you the attention you deserve! I am working like a madman, but it is paying off! I have been training on grill and am LOVING it! Definitely need some practice but it is so exciting moving up in the kitchen finally.
Hawaiian SPAM Recipes: Pineapple & SPAM Casserole
I am sure many of you are about to run away already, just from reading the title of this post. The rest are probably thinking, “We ask for Hawaiian recipes and THIS is what you give us?!” When I made this, I got a kick out of my mom’s comment, “I raised you better than that.” Haha! All I can say is hear me out. My roommate recently was given an assignment to try an ethnic recipe that was out of her comfort zone. Since we are both from Colorado, we were both a little freaked out by SPAM. Honestly, I didn’t even really know what it was until we looked for recipes. Many of you may not consider SPAM an ethnic food, but in Hawaii it kind of is! Every year over 20,000 people make their way to Waikiki for the yearly SPAM Jam festival- that is some love for SPAM.
Pear, Goat Cheese & Pistachio Pizza
Do any of you have that one (or two or three) food that you crave CONSTANTLY?! I have two, pizza and cheese. I could eat pizza anytime, anywhere. Lately all I have been thinking about it pizza, but for some odd reason I went a really long time without having any. As you could imagine, I was stoked when I walked into Morimoto a few days ago for work to find out that staff meal that day was focaccia pizza! Even after eating more than my fair share of staff meal, I still am craving pizza, so naturally I want to share one of my newest pizza creations with you to feed my craving.
