Stuffed Cinnamon Roll Bites
A few months ago I entered the Pillsbury bake-off challenge. Quite a bit of time has passed and I haven’t heard anything, I am assuming that my recipe did not make the cut. I didn’t share my recipe originally because I had high hopes that I would make finals, but obviously I was wrong..haha. Luckily, I know that my recipe was delicious and now I can share it with all of you to make at home. I would also like to let Pillsbury know that they are missing out!
Champagne Cake w/ Raspberry Buttercream Frosting
This summer has been filled with friends’ 21st birthdays. Besides being suckered into going out to bars more than I probably should, I have also been consuming ridiculous amounts of junk food and desserts at all of these birthdays. I have had baked mac ‘n’ cheeses, spinach artichoke dip, ice cream cake, way too much hummus (recipe coming soon!) and this lovely champagne cake.
Fruity Vanilla Creme Tart
It really doesn’t get much better than eating a cool, creamy tart with juicy fresh fruit on a hot summer evening. A few friends and I had a delicious bison barbeque this past week. We had one dish after another until we could hardly eat anymore… but then came the dessert. Consumption of this dessert took place around my kitchen counter with moaning, mmm’s and oh my god’s coming from stuffed faces.
Kiwi-Raspberry Sorbet
This has been the most bizarre summer I have seen for a while. It hadn’t stopped snowing in the mountains here in Colorado until about last week. After the snow stopped, a serious heat wave hit and took everyone by surprise. Lucky for me, I was puppy sitting at my parents’ house during this heat wave. This meant access to all of my mom’s cooking appliances, including an ice cream maker. I took full advantage of this and decided to make a nice cold treat for the heat.
Raspberry Swirl Cheesecake w/ Gingerbread Crust
To add to the holiday festivities, I decided to make something with gingerbread. I sat around for a while trying to think what else I could do with gingerbread other than make cookies or a house. Eventually, I decided on gingerbread cheesecake. I had never made homemade cheesecake before, but am very proud of the outcome. I used fat-free cream cheese too, which makes this dessert pretty healthy as far as desserts go!
