This summer has been gorgeous, but this last month has been so rainy here! The good news is that my garden is getting so big and I have been getting tons of kale and lettuce out already. Let’s face it, we all need more sushi in our lives. But, unless you buy the questionable grocery store stuff, it can be so EXPENSIVE! In the past, I have always been underwhelmed by the sushi I’ve made at home. It was OK, but nothing like those crazy rolls that you can get at the nice sushi places! This time, I was on a mission to make a restaurant-quality roll, that is easy to make at home.

We survived the Holidays! Sorry I have been MIA for a while. The Holidays are the busiest time of the year for a Catering Liaison; but we survived and are now enjoying the normal chaos of ski season in the mountains. There hasn’t been much snow, but it has been pretty cold! We have been eating a lot of comfort food, but are still trying to balance it with healthier options.

I am not sure what it is, but I have been seriously craving fish recently. Which is definitely not a bad thing! I didn’t want to get stuck making the same old fish dishes that I always do, so I was on a Pinterest search for some unique new recipe ideas. I found a recipe from Jamie Oliver that sounds too delicious not to try.
Blackberry Ginger Chicken
These longer days have been so great! I love getting up after the sun has come up and going to bed when the sun is just finally setting. For the most part, my vegetable garden is loving all the sun, too! Although, we have most definitely still had our fair share of rain here in the Rocky Mountains. I made this recipe on a lazy, rainy day a little while back.
Orange-Ginger Zucchini Noodles with Sesame Crusted Ahi
There has been quite the trend going around the food world. I am sure many of you have heard the term Zoodles or of the new “spiralizer” gadget. It seems that people have discovered a healthier way to eat noodles- and I am on board. I was skeptical at first, but after trying them myself, I am officially a “Zoodle” fan. I, unfortunately, do not own a Spiralizer. BUT, I was able to create these delicious zucchini noodles on my mandolin. I just put in the wide julienne insert and adjusts the thickness to my liking- voila! I am excited to try some other vegetables!
Asian Chicken Noodle Soup
The week after daylight savings is always a bit rough for me. As if preparing for the long, cold winter ahead wasn’t hard enough- now we have to watch the sun set before we eat dinner! It is easy to fall into the darkness and be bitter, but it is also easy to turn Bob Marley onto my Pandora (pretend I am on an island) and cook up some food that will make me smile. A positive outlook on the winter ahead is the only way to make it through!
