Eloté {Mexican Street Corn}
Local, non-GMO Colorado corn is here! I always get so excited this time of year. I love corn, but usually am too afraid to buy it in the off season since 88% of all corn that is grown is genetically modified- yikes! Luckily there are still a few local Colorado farmers growing corn the right way- including Olathe sweet corn. Sweet corn is a little whiter than normal corn and, like the name suggests, is much sweeter. Plus, you can’t beat the 2 ears for a buck price tag!
Blooming Onion w/ Herbed Béchamel Sauce
There has been a lot going on with our society lately. It is great to see our country moving in the right direction, with social equality (yay gay marriage!) and food quality. This past week, the FDA took partially hydrogenated oils OFF the GRAS (generally recognized as safe) list! All companies have three years to phase these harmful oils out of our food system. Also, big name companies like Subway, Kraft and General Mills have taken the pledge to remove artificial ingredients from their food. It seems that we have voted with our dollars and won!
Rosemary Butternut Baked Penne
Spring in Colorado… the ultimate tease. We had been enjoying warm sunny weather here in Summit County, until Mother’s Day weekend when got about a foot and a half of that wet, branch breaking, flower killing snow. Luckily, I had not planted any of my plants outside yet! Within two days, all the snow has melted and spring is trying to peak its head in. These bi-polar tendencies of Mother Nature in Colorado have made me indecisive on the food I want to eat.
Potato Wedges
There is something magical about potatoes. For some, they are an unhealthy, white starch- but for a broke twenty-something cook, they are a versatile, affordable delight. I love that you can use potatoes for so many different meals and in so many ways!
Chicken Puff Pastry Bites
I never thought I’d see the day that this happened, but I applied for a second job this week. I have an interview tomorrow to be a prepared foods cook at Whole Foods in Honolulu! I really hope I get the job, considering that I am B-R-O-K-E (so I encourage you to keep visiting my site and reading my posts to help me earn ad money 😉). Another exciting update from here in Hawaii, the rain is starting to die out!! Hooray for sunshine! But yes, now onto the food.
Creamy Shrimp Baked Onions
Wow, I feel like I have been going, going, going the past week or two. I have hardly had anytime to focus on my blog and get posts written; sorry if I haven’t been giving all of you the attention you deserve! I am working like a madman, but it is paying off! I have been training on grill and am LOVING it! Definitely need some practice but it is so exciting moving up in the kitchen finally.

After taking a break for January to get the New Year in order, Secret Recipe Club is back in action! If you do not already know, Secret Recipe Club is a fun group of bloggers who are assigned a fellow blogger each month (secretly) and chose one recipe from their blogger’s site to recreate for reveal day. I have met many awesome bloggers through this club and love browsing and trying their recipes!
Spiced Sweet Potato Chips
How’s the new year treating everybody so far? I am down to only 3 days left in colorful Colorado before heading to the beaches of Hawaii for eight months- no I am not excited at all…. Right. I am like a little kid before Christmas, I am dying waiting for Friday to arrive! I have been trying to exercise more and eat healthier before I go, but we all know how hard that is. For some reason, when you are trying to NOT eat certain things, they are ALL you crave.
Throwback Thursday: Chicken & Zucchini Baked Ziti
I moved out of my apartment in Breckenridge today to move back to Boulder. Only one more semester of school in Boulder until I get to start culinary school! I am going to miss living in the mountains, the beautiful views from my front porch, the pace of life, and the cool weather. The one thing that I won’t miss about that apartment is the tiny piece-of-junk kitchen. When we first moved in, our stove would spark and pop every time we tried to turn it on- no it was not gas! This week’s Throwback Thursday recipe was made during this time, when I was afraid to cook anything on the stove. Instead I boiled the water for the pasta in the microwave to cook it!
Roasted Garlic Flatbread
I have stuck to my resolution to bake more bread. I have decided to start with a very easy bread that doesn’t take long to rise or bake- flatbread. I loved eating the flatbreads while working at Noodles and Company, if I had known they were this easy to make I would have made them at home earlier!
