Kerabu Mangga Timun {Mango Cucumber Salad} w/ Kaffir Lime Dressing
To pair with my Malaysian Curry Laska, I decided to make a light salad. The RawSpiceBar box also had a Kaffir Lime spice blend, which I though would be perfect for a cucumber salad. I ended up making a dressing out of the spice blend and tossing it with shaved mango and cucumber.This salad was fresh, yet had a spiced flavorĀ from the turmeric in the spice blend. I loved the addition of fresh basil, but you could also pair it with cilantro. If you are not a fan of turmeric, you can always just toss the salad and a nice rice vinegar dressing.
Kerabu Mangga Timun {Mango Cucumber Salad} w/ Kaffir Lime Dressing
Ingredients
- 1 T Raw Spice Bar Kaffir Lime Blend
- kaffir lime powder, turmeric, palm sugar, red chiles
- 3 garlic cloves minced
- 1 " fresh ginger peeled & minced
- 2 limes juiced
- 1 1/2 t salt
- 1/4 c canola oil
- 2 T olive oil
- 2 moderately ripe mangoes
- 2 cucumbers
- 2 shallots
- 2 sprigs basil chiffonade
Instructions
- For the dressing, combine all ingredients except the oil.
- Slowly add the oil, whisking quickly to emulsify the dressing.
- For the salad, slice the mango and cucumber into thin match sticks using a mandolin or a knife.
- Julienne the shallot in to thin slices.
- Toss all ingredients with the dressing and garnish with fresh basil to serve.
