Can you believe it is already almost Father’s Day?! Father’s day falls on my own dad’s birthday every few years- which makes the day extra special for him. If I know dads- I know that food will win them over anytime! So, spice things up and surprise your own dad with this cheesy, rich, to-die-for (no pun intended) Mexican chicken recipe.

Chicken & Broccoli Grilled Cheese
I really don’t know why I haven’t thought of this before. I love Mac ‘N’ Cheese and I love grilled cheese sandwiches, but for some reason I have never made my favorite Macs into grilled cheeses. I have a feeling that this is going to be a first of many Mac-inspired paninis. I am also thinking I might turn some of my favorite paninis into Mac ‘N’ Cheese (Caprese Mac with a mozzarella cheese sauce sound good to anyone else?). Just the though is making me hungry!

With finals for culinary school right around the corner, my classmates and I have been scrambling to lock down our externships. When meeting with my advisor, I was told that I had the potential to pursue something big, even bigger than anything in Colorado. It really got me thinking and motivated me to settle for nothing but the best. I booked my flight to NYC and set up stages at a couple Michelin Starred restaurants, Eleven Madison Park and The Modern. Both stages went great; I was stoked! EMP seemed a little too military-like for me. Only Sous Chefs were allowed to plate the food and you weren’t allowed to talk in the kitchen. The Modern, on the other hand, let their cooks do much more and everyone seemed to be having a great time during service. I was offered a paid externship with The Modern and will be starting in April! I am excited to experience something new and take the next step in my career.

Chicken Puff Pastry Bites
I never thought I’d see the day that this happened, but I applied for a second job this week. I have an interview tomorrow to be a prepared foods cook at Whole Foods in Honolulu! I really hope I get the job, considering that I am B-R-O-K-E (so I encourage you to keep visiting my site and reading my posts to help me earn ad money 😉). Another exciting update from here in Hawaii, the rain is starting to die out!! Hooray for sunshine! But yes, now onto the food.
Cheddar Ale Soup
It has been POURING rain here for about a week now; like serious torrential downpour. It is funny how our bodies adapt to the climate we are living in. If I was in Colorado, a rainy 65-70 degrees would be refreshing, but here it is COLD! So even though I’m sure many of you picture me lounging on the beach everyday, surfing at sunset, etc… I can assure you that other than my daily trek to work, I am couped up in my house wanting the same thing you want- comfort food and soup. Luckily I had an awesome recipe saved from a while back- Cheddar Ale Soup from Tracy’s Culinary Adventures.
Philly Cheesesteak Sandwich on Garlic Bread
Sometimes my wandering mind actually provides me with great ideas. The other day I was thinking about sandwiches and had an epiphony; garlic bread as the base of the sandwich. Boom. Why didn’t I think of this earlier? What is not to love about adding the deliciousness of garlic bread to a sandwich. I think I should get my food truck up and running asap before my genius ideas get stolen! 😉
Chili Mac ‘N’ Cheese
Sorry in advance for such a short post. I am trying to keep up with providing you all with tasty recipes while also trying to live life to the fullest for my 8 months in Hawaii. I know you are all awesome, so I am sure you understand. I am writing this post at 12:15 AM before heading to bed so that I can wake up at 5:30 to head to the North Shore to watch the sunrise and surfing before I go into work again tomorrow afternoon. =)
Hawaiian SPAM Recipes: Pineapple & SPAM Casserole
I am sure many of you are about to run away already, just from reading the title of this post. The rest are probably thinking, “We ask for Hawaiian recipes and THIS is what you give us?!” When I made this, I got a kick out of my mom’s comment, “I raised you better than that.” Haha! All I can say is hear me out. My roommate recently was given an assignment to try an ethnic recipe that was out of her comfort zone. Since we are both from Colorado, we were both a little freaked out by SPAM. Honestly, I didn’t even really know what it was until we looked for recipes. Many of you may not consider SPAM an ethnic food, but in Hawaii it kind of is! Every year over 20,000 people make their way to Waikiki for the yearly SPAM Jam festival- that is some love for SPAM.
