As some of you may know, I am applying to the Basque Stage Sammic Rising Stars Scholarship. If I win, I get to do a 3-month stage at Xarma restaurant in San Sebastian, Spain! If you follow my blog, you probably already know about my addiction to food and experiencing new cultures, and how excited I get when I can combine the two! As part of my application, I had to create a dish to share. I wanted my dish to represent who I am, as well as my style of cooking.
I hope everyone had a great Thanksgiving (or just a great weekend for everyone in other countries)! If you follow me on Twitter you probably saw some of my photos from my family trip to NYC for the holiday. What an exhausting “vacation” it was. If there is anything the Morris family knows how to do is eat their way through any city. We are the type of family that plans the entire trip about where we are going to eat next; rough life for a foodie like me right?! I can thank my Mom for that! I was able to try bone marrow for the first time at Il Vagabondo, which I was very excited about. I ordered the veal shank, which came with a tiny marrow fork right in the top of the shank. I spread it on bread and it was melt-in-your-mouth delicious. I also spent the entire afternoon on Friday going door-to-door of my top 8 dream externship restaurants to talk to chefs and submit my resume and cover letters. As of right now I have three “trails” set up, which is like a working interview for an externship. They are at Eleven Madison Park, The Modern and Bouley. Although, my true dream externship would be to win the Basque Stage and spend 3-6 months in the Basque countryside!
I know it may seem weird, but I have still eaten quite a bit of soup here in Hawaii. I love making soups and stews because I feel like it gives me room to be creative. I can throw whatever I want into a soup/stew and whip it up pretty quickly. Because of that, soups are a great way to use up leftover ingredients in your kitchen. Also, they are great if you don’t have time to stand over your stove while making dinner. You can be getting ready, taking care of the kids or just kicking back watching Top Chef while your soup works its magic.
I don’t know about you, but here in Colorado it has been snowy, snowy, snowy. This past Tuesday was in the negatives in Boulder! With winter in full effect, I find myself constantly wanting soup. Vegetable Noodle Soup from My Naturally Frugal Family
When I think of homestyle cooking, I usually think of some sort of chicken, carrot and pea dish. Either chicken noodle soup, chicken pot pies or, in this case, chicken and dumplings. You can really use whichever combination of vegetables and meat you want for a recipe like this. I chose these specific ones because I was moving out of my house and needed to use up the things in my fridge.
I have finally transfered almost all of my old recipes to my new blog, only one or two more Throwback Thursdays after this one. I am going to start a new weekly theme idea once Throwback Thursdays are over. I would love to hear your input about what you would like to see. I was considering a few things. First, I was thinking about focusing on a different country each week and discussion the traditions, flavors and any other interesting things behind the culture. The other idea I had was to really focus on the senses, since that is what my blog is really about. I was considering zoning in on a different sense description each week and showing how it is represented in certain recipes. For example, I would use the word “tangy” one week and discuss what that really means and give you a recipe that really represents what the word “tangy” means. Please let me know what you think of these ideas and let me know if you have any others that you would like to see!
Do you ever get that feeling where all you want to do for dinner is grill a steak and microwave a potato? Sometimes simple is better, but you don’t have to sacrifice flavor! This recipe is a simple way to add a little extra flavor for those days when your motivation is lacking. It is quick, easy and healthy!
I love exploring the flavors of foreign cuisines. Each country has their own unique way of doing things, that gives an exciting new twist to many foods. If you haven’t already, I highly suggest looking into the different flavors from around the world. I think that knowing different flavor combinations helps expand your cooking and keeps you from making the same dish over and over again.
This week I had some squash from my mom’s farm that needed to be used. I was in the mood for something a bit sweeter, so I decided on this Moroccan-style recipe. This dish has the perfect balance of sweet and savory. The raisins are a definite must, I even decided to add a few more to the recipe. It can also easily be made vegan/vegetarian by using vegetable broth and taking out the chicken. This recipe is simple to put together but looks sophisticated, a great idea for dinner guests.
I came across a recipe for Indian Meatballs while I was in New Zealand last summer, but never got around to making them. This week I decided to add to the recipe I found to make this dish. This dish is not very spicy because the coconut milk tones down the curry, but can be made spicier with Siracha if you desire. This took me a bit longer than I expected… I never realized that making meatballs was such a hassle!
