Easy Shakshuka with Feta
Originating from the Ottoman Empire Shakshouka or Shakshuka is an easy baked egg recipe filled with flavor. The word is Arabic for “a mixture”, which is quite fitting for this dish. Eggless Blueberry Muffins {Vegan Recipe Option}
Sometimes I find myself talking about food with Ben, only to hear the response, “I have never had that.” It makes my heart ache; how could somebody not have had ____! This time, it was a muffin. NEVER. HAD. A. MUFFIN?! I have a soft spot for a good blueberry muffin, so I had to make a Ben Friendly (soon to be trademarked) eggless blueberry muffin. It just so happens that this vegan or just eggless blueberry muffin recipe satisfied the Ben-Friendly requirements!
Caprese Egg-in-a-Hole Toast
Do you ever find yourself scrolling through page after page on Pinterest? If so, do you also find yourself with a list of things that you “definitely have to make”, including home improvement projects? That is how I am too. Pinterest has created this strange world of adorable tricks and easy DIY projects that never used to exist. I, for one, am thankful for that. These egg-in-a-hole toasts were definitely inspired by all the crazy breakfast ideas you see on Pinterest.

The holidays are just around the corner; what will you be making? For those of you who are not sure, I’ve compiled a list of my top 30 favorite holiday recipes. There are some sweet, some savory, some for the early morning and some for late night. Enjoy!
Shrimp Eggs Benedict
Working nights has really made me love breakfast. Since I have to be into work by 2:30 or 3, I don’t feel like I really have time to make a nice recipe for my blog on days that I work, but breakfast is a different story. I can wake up early, make a delicious meal, and still have time to photograph it before work. I never was a huge breakfast recipe fan before, but lately I have been loving making delicious, over-the-top breakfast dishes.
Maple & Squash Oatmeal
If any of you have worked night shifts for your job, you understand how my schedule works. I have the morning/early afternoon to cook or do whatever else I want. I have been waiting for my surfboard to be fixed, so lately I haven’t been going to the beach before work. Instead, I have been eating lots of breakfast food. It is kind of nice because I only have to buy food for breakfast, but then get free “family meal” at work and lunch/dinner and snack throughout the night. It has definitely been saving me money.
Soft Boiled Egg Bagel Sandwich
While eating breakfast recently, I thought to myself, “Why have I not shared this on my blog?!” This may not be a super original recipe, but it is just too delicious not to share. For breakfast, I usually end up making extravagant bagel sandwiches. I love soft boiled eggs; with them, you get the delicious whites of hard boiled eggs, but the nice runny yolk of a sunny side up. I also like that I don’t need a fat to cook them in.
Artichoke & Goat Cheese Strata
The title of this post may have you thinking, “Oh god, Jenny is about to rant about how much she loves artichokes and goat cheese again.” Lucky for you, I think I have established that. Instead I am going to talk about casseroles/stratas/any other dish you can cook in one pot/casserole dish. There is something that eases my mind when I am able to make an entire meal without having to wash tons of pots, pans and skillets afterwards. If you don’t make one-pot-meals very often, you really should give it a try; there is something therapeutic and relaxing about its simplicity.
Breakfast Pizza
Now that I have my easy flatbread recipe, I have been experimenting with its multiple uses. I am a big fan of breads for breakfast, so I decided to make a breakfast pizza with the flatbread. Beware, these pizzas are very filling, I only ate half and saved the other half for breakfast the next day!
Cinnamon Crepes w/ Blueberry Compote
Cooking fancy breakfasts for friends is always a ton of fun for me, but I don’t get to do it often. Usually, when a large group of friends end up spending the night at the same place, breakfast doesn’t get made for everybody for one of three reasons; 1- they wake up with the thought “Man I need to go home”, 2- nobody is in the mood to cook, or 3- you don’t have the ingredients or kitchen to use. If you are not a twenty-something year old you probably hardly ever wake up in a random friend’s house. This means planning a breakfast party if you ever want to have a big breakfast with friends, which for some reason just doesn’t happen as often in our busy lives. I am happy that I was able to cook these delicious crepes for a group, rather than just myself! These are also the perfect idea for a Father’s Day surprise!
