Let’s face it, we all need more sushi in our lives. But, unless you buy the questionable grocery store stuff, it can be so EXPENSIVE! In the past, I have always been underwhelmed by the sushi I’ve made at home. It was OK, but nothing like those crazy rolls that you can get at the nice sushi places! This time, I was on a mission to make a restaurant-quality roll, that is easy to make at home.
Have you ever heard people say, “Go home Mother Nature, you’re drunk”? Well, that is how springtime in the mountains tends to feel. After a stint of 50F+ weather, we are back to a gloomy rainy/snowy week. The kind of weather that makes you just want to curl up on the couch with a good book.
Now that you all have hopefully abandoned your New Year’s resolution of healthy eating, I have a rich and delicious recipe for you to try! I have been hesitant to post this recipe, since the only photo I had of it was not very good, but I have decided that it is too delicious not to share!
Adobo chicken stole my heart in Hawaii. I worked in a kitchen with two Filipino boys and one of their mothers for the second half of my time living in Honolulu. I will never be able to recreate their delicious adobo (should have gotten a recipe!)- especially since I don’t see myself buying chicken livers anytime soon; although that might have been the secret touch.
It has been a snowy week up here in the mountains; we got over 2 feet of snow total! Not to mention, the temps were as cold as -15F some nights (with a windchill of -30F!). This kind of weather calls for some serious comfort food. Thanks to Jamie Oliver for, yet another, delicious inspiration!
Sometimes I find myself talking about food with Ben, only to hear the response, “I have never had that.” It makes my heart ache; how could somebody not have had ____! This time, it was a muffin. NEVER. HAD. A. MUFFIN?! I have a soft spot for a good blueberry muffin, so I had to make a Ben Friendly (soon to be trademarked) eggless blueberry muffin. It just so happens that this vegan or just eggless blueberry muffin recipe satisfied the Ben-Friendly requirements!
I recently went down to El Paso, TX to help open a new Whole Foods. Apart from the 65 hr paycheck, I didn’t come back with much… except the desire to make Posole. I had some DELICIOUS Posole at a restaurant called Sabertooth there.
Fall is in full force in the mountains. My sister-in-law sent a video of her lawn today and it was still BRIGHT GREEN! Definitely not the case here. The trees have almost lost all their leaves and we have even gotten a few days with snow. Luckily, apples are in season and I had a HUGE acorn squash from Ben’s Mom sitting in our pantry. Bring on the comforting flavors of fall!
It seems summer has slipped away from us already, but that doesn’t mean we can’t eat like it’s still summer! This Poke is a DELICIOUS twist on one of my favorite dishes. It is so easy to make and the flavors are so killer your Hawaiian friend will forgive you for changing a classic.
