Tequila-Lime Salsa & Homemade Tortilla Chips
For one of my appetizers at my Foodbuzz 24×24 party I made homemade tequila-lime salsa and tortilla chips. This salsa has a beautiful array of colors and a nice spicy kick at the end. I baked homemade tortilla chips seasoned with garlic, cayenne pepper, salt and pepper; such a simple thing to make and so much healthier than fried chips from the store. I also like these homemade flour tortilla chips because they are softer and kind of crumble away in your mouth with the salsa. Usually salsa is hardly touched at parties, but this one got devoured by my guests along with every last chip. I think they might have liked it?
Orange Mint Hibiscus Mojitos
To kick off our Foodbuzz 24×24 party we made mojitos and margaritas, We began by making an agave hibiscus simple syrup by boiling down hibiscus leaves with agave nectar. Once we had our syrup, it was time to make mojitos. We are lucky enough to have our own orange mint plant in our garden this year, but if you cannot find orange mint regular mint works as well. These mojitos are very unique, the hibiscus flowers give them a great pink color and a hint of floral flavor; very refreshing on a hot summer day.
Pineapple Basil Margaritas
For my Foodbuzz 24×24 party, we also made pineapple basil margaritas with fresh basil from our garden. These margaritas are sweeter than your average and don’t have that sour lime taste that sometimes comes with others. The basil adds a nice earthy kick to balance the sweetness. I can safely say that these margaritas are the best that I have ever had. I highly recommend you try both this and the orange mint hibiscus mojito recipes and wow your company with them!
A Pairing Party w/ Swiss Maid Fudge
When I first began blogging, I didn’t really know what I would put on my blog or where it would take me. Actually, I was forced (well maybe required is a better word) to make a blog for my advertising media class last fall and figured I love food, music, photos, etc. so why not focus on my senses. Almost a year later I am at a point that I would have never imagined. I am completely submerged in the blogging universe and loving it! When I tell people that I am a blogger they are always a little uneasy, but then when I tell them I am a FOOD blogger they always seem so intrigued. I am so excited about all of the opportunities I have been given because of my blog, although I must say that the next few weeks are kind of filled with different blogging opportunites, I hope you enjoy them too!
Baked Everything Bagel Salmon
Since I first began blogging about food, I have enjoyed following one blogger named Alyssa over at Constructive Deconstruction. Many of her posts are deconstructed dishes recreated in the most amazing ways. I was constantly in awe of her ideas and got inspiration from her from day to day. I always tried to think of ways that I could deconstruct something, but it just never really clicked in my head; until this. I am sure I am not the first to think of this because this is such a simple deconstruction, but I am excited about it because I have never really been good at them.
Avocado Whipped Potatoes w/ Caramelized Onions
Mashed potatoes will never get old to me. As one of the three “vegetables” that I would eat as a kid, I ate them practically every day. At family dinners I would always mash my potatoes, peas and steak together; my mom called it my homemade shepherd’s pie, even though I would never have eaten a shepherd’s pie back then. I also remember the first time I had a double stuffed potato… in LOVE! My brother gave me a potato masher for my birthday, something I have wanted for ages!, so I have been back on my mashed potato game. These days I am interested in finding more unique combinations for my mashed potatoes.
Spicy Caribbean Pork Chops w/ Rice & Peas
If you have been reading my blog for a while, you already know how much I love trying new exotic flavor combinations. The weirder the combination, the more interested I seem to be. I’m not sure why this is but it’s kind of funny to me now because I was such a picky eater as a kid and never was interested in trying new things. The only vegetables I ate until about high school were peas, corn and mashed potatoes… how things have changed.
Easy Chicken & Dumplings
When I think of homestyle cooking, I usually think of some sort of chicken, carrot and pea dish. Either chicken noodle soup, chicken pot pies or, in this case, chicken and dumplings. You can really use whichever combination of vegetables and meat you want for a recipe like this. I chose these specific ones because I was moving out of my house and needed to use up the things in my fridge.
Baked Tex-Mex Egg Rolls
I recently saw the idea for Southwestern egg rolls on Mel’s Kitchen Cafe and was instantly interested. For one, I have never made egg rolls; they are still on my list to make. Secondly, I love Mexican food. I was surprised to see that they were inside tortillas instead, but figured that is probably a better idea anyway. I decided to make my own combination of ingredients for the filling, because I wasn’t a huge fan of the black beans in the recipe I saw.
Buffalo Style Chicken Breasts w/ Bleu Cheese Sauce
There are very few things that I would not put Buffalo sauce on. I love the flavor and all the varieties of it. I have made all sorts of buffalo recipes, including one of my favorites the Buffalo Chicken Mac’N’Cheese Casserole. That recipe was some serious comfort food, but this recipe is a bit fancier and not so hard on your arteries. It is a good idea to grill the chicken for this recipe, but you can also bake it if you do not have access to a grill. I baked it when I originally cooked it.
