Balsamic Glazed Carrots

Do you ever get that feeling where all you want to do for dinner is grill a steak and microwave a potato? Sometimes simple is better, but you don’t have to sacrifice flavor! This recipe is a simple way to add a little extra flavor for those days when your motivation is lacking. It is quick, easy and healthy!

Balsamic Glazed Carrots

Serves: 4
 

Ingredients
  • 2 cups baby carrots
  • 4 tbsp butter (melted)
  • salt & pepper (to taste)
  • ½-3/4 cup balsamic vinegar
  • 3 tbsp chives (minced)

Instructions
  1. Preheat oven to 425F and spread the carrots onto a baking sheet.
  2. Drizzle the melted butter over the carrots and season with salt and pepper.
  3. Bake at 425F until carrots are tender (about 25-30 minutes).
  4. Toss the carrots in a medium bowl with ½ cup of balsamic vinegar, adding more if desired.
  5. Add the chives and continue to toss until well-coated and season to taste with salt and pepper.
