We survived the Holidays! Sorry I have been MIA for a while. The Holidays are the busiest time of the year for a Catering Liaison; but we survived and are now enjoying the normal chaos of ski season in the mountains. There hasn’t been much snow, but it has been pretty cold! We have been eating a lot of comfort food, but are still trying to balance it with healthier options.

Orecchiette pasta will forever remind me of the trip I took to Puglia, Italy with my mom to attend The Awaiting Table cooking school. We learned how to make our own little “ear” pasta; it was surprisingly easy! When I saw a box of orcchiette pasta on the shelves at the store, I couldn’t resist.
Kerabu Mangga Timun {Mango Cucumber Salad} w/ Kaffir Lime Dressing
To pair with my Malaysian Curry Laska, I decided to make a light salad. The RawSpiceBar box also had a Kaffir Lime spice blend, which I though would be perfect for a cucumber salad. I ended up making a dressing out of the spice blend and tossing it with shaved mango and cucumber.

It’s official, I have full-blown travel fever. Ben and I have been looking into planning a trip to Germany for a while now, and it has gotten to me. I have been glued to my computer for two days researching and checking prices on all the places we are planning to go. All we need is approval from our bosses to book our tickets for next August/September!

As the cool weather becomes more common, I find myself wanting to sit and sip my tea slowly. The idea of a big extravagant dinner is not always there. Sometimes it is better for the classics. Roasted chicken reminds me of my childhood. For me, it’s hard to beat a nice crunchy piece of chicken skin.

I have also had horrible allergies this year, which I have never had before. When you can’t stop sniffling, sometimes all you need is some chicken noodle soup.

Autumn is in full swing here; although Winter may be making an appearance very soon. The last of the leaves are falling off of our Aspen trees outside my window and the ground has lost it’s green tint in exchange for an amber glow. These views and the cool fall evenings make you want to cuddle up with a nice cozy meal. This meals is perfect for this time of year.
