Tequila- Lime Shrimp Kebabs
Since most of my new roommates are vegetarians, I had to provide another option along with the beef for my Foodbuzz 24×24 party. For them I chose to do tequila-lime marinated shrimp for kebabs. Shrimp only need to marinate for about 20 minutes, if you marinate them too long the acid in the marinade will begin to cook the shrimp.

Ingredients
- 1 tbsp olive oil
- 1 shallot chopped
- 2 cloves garlic chopped
- 1 jalapeƱo chopped
- 1 tsp cumin
- 1 lb shrimp peeled and deveined
- 1/4 cup tequila
- 1/4 cup lime juice
- 1 tsp lime zest
- salt and pepper
- 1 handful cilantro chopped
- 2 red peppers
- 2 green peppers
- 1 onion
Instructions
- Combine the shrimp with all ingredients except the bell peppers and onion and toss to coat.
- Let the shrimp marinate for about 20 minutes, then place on skewers with slices of onions, red bell peppers and green bell peppers.
- Grill over medium heat until shrimp are cooked through (about 8-10 minutes), flipping half way through.
