Chipotle-Plum BBQ Sauce
Winter has finally arrived in Summit County. I have to say, those days of 40+ degrees were pretty nice. Luckily I leave for my trip to Panama in less than a month! For now, I’ll spend my time snowboarding and hiding in my tiny little kitchen.
This recipe is definitely one to keep. I had some leftover plum paste that my mom had given me from her Plum trees last summer; I wasn’t sure how is going to use it or what I could put it on until one day when it hit me- barbecue sauce! This is the perfect example of a sweet spicy barbecue sauce. If you don’t have plum paste you can substitute any fruit marmalade or preserves. If you like things a little less spicy I would cut back on the amount of chipotle peppers in the adobo. Also, I will definitely be doing slow cooker ribs again! All you do is put the BBQ and ribs in the slow cooker and let them cook on low for 6-8 hours- melt in your mouth perfect ribs!
Slow-Cooker Ribs w/ Chipotle-Plum BBQ

- Chipotle-Plum BBQ Sauce
- 1/2 C Plum Paste or Plum Preserves
- 2 T Cider Vinegar
- 1 T Lemon Juice
- 1/2 C Yellow Onion chopped
- 1 T Garlic minced
- 2 T Chipotle Peppers in Adobo
- 2 T Ketchup
- 1 t Salt
- 1 t Black Pepper
Instructions
- Combine all ingredients in a food processor.
- Blend until smooth.
