Smoked Salmon Baked Eggs in Avocado
This spring has been SO nice! The weather has been awesome, which means we have been able to camp a bunch already! With all the climbing and outdoor activities it is important to have a breakfast that will set you up for success. This is another Pinsperation post, but the boats are just so cute you can’t be mad about it!
This breakfast is packed with healthy fats and omegas. Great for before an active day (or after!). The creamy avocado pairs perfectly with the salt of the smoked salmon. You can also add some spinach if you really want to go all out.
Smoked Salmon Baked Eggs in Avocado
Ingredients
- 1 large avocado
- 2 eggs
- 2 oz smoked salmon
- 1 tsp minced shallot
- salt
- pepper
- lemon
- crushed red pepper
Instructions
- Preheat the oven to 425F. White the oven is preheating, prepare the avocados.
- Halve the avocado lengthwise and scoop out a small amount so that the egg and smoked salmon will fit inside.
- Line each bowl with 1 oz smoked salmon.
- Crack the eggs into each, then top with minced shallot, salt and pepper.
- Bake the avocados at 425F for about 15 minutes, or until whites have set.
- Top with a squeeze of lemon and crushed red pepper, if desired, before serving.
