Soft Boiled Egg with Crispy Kale Chips & Whipped Goat Cheese
Have you ever had a soft-boiled egg? It’s one of my favorite things and I’m so excited to share this unique recipe with you because it combines another favorite food – KALE CHIPS!
The eggs are cooked just enough so that the whites are set, but the yolk is still runny. They are delicious served with some crispy kale chips and whipped goat cheese underneath. Thanks to Food & Wine magazine for another awesome recipe. Trust me, you’re going to love this!
Molletes Toast with Black Bean Puree, Fried Egg & Pickled Red Onion
This easy and versatile Molletes recipe is perfect for breakfast, lunch, or dinner! This version is extra special because it uses homemade pickled red onions. This is a great vegetarian-friendly recipe that your friends and family will love. Enjoy!
Skinny Avocado Egg Salad
If you’re looking for a healthy, delicious and quick lunch option, look no further than this Skinny Avocado Egg Salad! This easy egg salad is packed with protein and healthy fats (but no mayo!) and can be whipped up in just minutes. So go ahead and add it to your lunch rotation – you won’t regret it!
Smoked Salmon Baked Eggs in Avocado
This spring has been SO nice! The weather has been awesome, which means we have been able to camp a bunch already! With all the climbing and outdoor activities it is important to have a breakfast that will set you up for success. This is another Pinsperation post, but the boats are just so cute you can’t be mad about it!
Kale Pesto Quinoa w/ Poached Egg
Hey, I warned you didn’t I? Another quinoa bowl. This one was especially satisfying because I used my first harvest of kale from my garden! No matter what you grow, it will always taste better freshly harvested from your own garden. No farmer’s market or grocery store can create that feeling of accomplishment that growing your own food can.
Shrimp Eggs Benedict
Working nights has really made me love breakfast. Since I have to be into work by 2:30 or 3, I don’t feel like I really have time to make a nice recipe for my blog on days that I work, but breakfast is a different story. I can wake up early, make a delicious meal, and still have time to photograph it before work. I never was a huge breakfast recipe fan before, but lately I have been loving making delicious, over-the-top breakfast dishes.
Deviled Eggs
Honolulu was the place to be this weekend. With the Pro Bowl coming into town, everything was buzzing. Friday night, I worked a buy out at Morimoto that was hosted by the NFL! Dave Mathews from DMB was even there! Even though I was in the kitchen all night, I felt very cool and important. In the spirit of football and the super bowl, I have a Super Bowl party recipe for you today.
Soft Boiled Egg Bagel Sandwich
While eating breakfast recently, I thought to myself, “Why have I not shared this on my blog?!” This may not be a super original recipe, but it is just too delicious not to share. For breakfast, I usually end up making extravagant bagel sandwiches. I love soft boiled eggs; with them, you get the delicious whites of hard boiled eggs, but the nice runny yolk of a sunny side up. I also like that I don’t need a fat to cook them in.
Breakfast Pizza
Now that I have my easy flatbread recipe, I have been experimenting with its multiple uses. I am a big fan of breads for breakfast, so I decided to make a breakfast pizza with the flatbread. Beware, these pizzas are very filling, I only ate half and saved the other half for breakfast the next day!
Spinach, Caramelized Onion, & Feta Quiche
Today I crossed another “Culinary To-Do” off of my list, bake a quiche. I think I ended up putting too many potatoes in mine, because I didn’t have room to add all of my egg mixture. I changed my recipe to fix this by reducing the amount of milk and potatoes. I was afraid that my quiche was going to spill over, but it turned out perfect! The breadsticks make the crust extra delicious. If you ever are going to make a quiche, this recipe is the one you need to try! (Original recipe from Cooking Light on MyRecipes)
