Rosemary Butternut Baked Penne
Spring in Colorado… the ultimate tease. We had been enjoying warm sunny weather here in Summit County, until Mother’s Day weekend when got about a foot and a half of that wet, branch breaking, flower killing snow. Luckily, I had not planted any of my plants outside yet! Within two days, all the snow has melted and spring is trying to peak its head in. These bi-polar tendencies of Mother Nature in Colorado have made me indecisive on the food I want to eat.

We are back from our adventure to Panama! We spent twice as much money as we had budgeted, but we learned a lot about what we will do for our NEXT trip. This was the first time I have looked forward to returning from a trip. Don’t get me wrong, the trip was amazing… and two and a half weeks off work- awesome! But, for once in my life I have a job that I love and a home that I look forward to coming back to. Most of all, I was excited to cook for myself again. By the end of our two weeks in Panama, we had eaten enough onion rings, fish and chips and tacos for quite some time. I was excited to cook HEALTHY options!

Winter has finally arrived in Summit County. I have to say, those days of 40+ degrees were pretty nice. Luckily I leave for my trip to Panama in less than a month! For now, I’ll spend my time snowboarding and hiding in my tiny little kitchen.
Brown Butter Balsamic Pork w/ Sweet Potatoes & Kale
The Holidays are FINALLY over! Hooray!!! Work has finally begun to slow down and I have had some time to go snowboarding and cook for myself again. I made it through with only having two sick days. *Knock on wood* My herb plants have gotten huge, leaving me with an abundance of sage, rosemary and thyme. I also planted the bottom stalks of my scallions and they grow like an inch a day! If you have never tried replanting your scallions or celery you must try it! Here is a good article about plants you can re-grow: 12 Vegetables That Magically Regrow Themselves. I have tried, and succeeded, in regrowing bok choy, celery, scallions and lettuce. I think I will try the pineapple and avocado for kicks!
Product Review: SousVide Supreme
As many of you know, I have had the privilege to play around with a new SousVide Supreme water bath over the last couple of months! I have worked in many fine-dining restaurants that use sous-vide to cook proteins for their menu. I was very curious to see how a home sous-vide would work.

Honey Rosemary Pears
I officially bought my first Christmas tree. It is a living 1 1/2 ft European Cypress. I am so excited that I found a living tree! Ben also got us a pine candle. Needless to say we are feeling quite festive here in the mountains. The Christmas spirit has also made me want to cook festive food, even dessert- something that I don’t normally crave.
Maple Rosemary Sous-Vide Turkey
Winter has arrived in Summit County. We have been getting feet on feet of snow! I am struggling to keep my plants alive in my little apartment. As for my eating habits, I am in winter-mode full swing. There have been a lot of potatoes and winter squash in my life. In the spirit of Thanksgiving, I wanted to share a delicious Turkey recipe with all of you. I have been eating turkey quite a bit for the last few weeks, but somehow am still not sick of it! I have been playing around with my new SousVide Supreme also and have some delicious creations to share with you over the next few weeks.

The week after daylight savings is always a bit rough for me. As if preparing for the long, cold winter ahead wasn’t hard enough- now we have to watch the sun set before we eat dinner! It is easy to fall into the darkness and be bitter, but it is also easy to turn Bob Marley onto my Pandora (pretend I am on an island) and cook up some food that will make me smile. A positive outlook on the winter ahead is the only way to make it through!
Trying Out Online Grocery Shopping
Over the last two months, I have had the privilege to test out Walmart’s
new Walmart To-Go program. I was a little hesitant to participate at first, but decided to give it a go. I was curious to see how many organic food items they would have available, now that they have their Wild Oats organic line.
